Pork Chops with Apples, Onions, and Sweet Potatoes
YUMYUM! I followed the suggestions to toss the apples, sweet potatoes and onions with probably 2 TBS of brown sugar as well as add about 1/2 cup of water to the pan. I used my mandolin for the onion and sweet potato and my apple corer/peeler/slicer for the apples. Everything was about the same thickness. I only used about half of an onion, 3 small apples, and 1 large sweet potato. Delicious!

Ham and Green Bean Casserole
It's not bad -- good for using up my leftovers from Thanksgiving (we had ham instead of turkey). I used the leftover ham, fresh green beans, and some rolls and it came out pretty good. Oh, didn't have the cream of celery, so used cream of mushroom. I really liked the topping, but felt there was too much rice. I think if I make it again, I'd use less rice. Give it a try - it's good!

Lyndsie's Dr. Pepper(R) Meatballs
Wow! This is good! I followed the recipe except I left out the bell pepper since I didn't have any, and I used dried minced onions (too lazy today to chop onions today). My package of ground turkey was 1.25lbs and I made 15 meatballs. When I added the sauce, I spooned some on each meatball, and I flipped them over when baking was done before letting them rest. I also resisted the urge to just put in the whole can of diced tomatoes and measured out 1 cup as written. Yum!! You can't taste the Dr. Pepper and I bet you'd get the same result with Coke, too. I served them over rice and fresh broccoli. Everyone loved them!!
