About this Cook
My fiance loves it when I'm in the kitchen cooking something yummy for us. He loves that I actually enjoy cooking. He is so proud when I cook for company and everyone devours my food. It makes me want to try new things.
My favorite things to cook
Mexican food, sushi rolls and nigiri.
My favorite family cooking traditions
I make my mother's "Trash" at the holidays. It's made with Bugles, rice chex, nuts, etc., but the secret ingredient is bacon grease. Worcestershire sauce and Tobasco sauce make it spicy. It is labor intensive, but it is a holiday tradition and so worth it. No other Trash recipe I've tasted even comes close to how good my mother's recipe is :)
My cooking triumphs
After lots of practice, I make an awesome pecan praline, and I've gotten pretty good at sushi rolls. I learned how to make the inside-out rolls from watching YouTube videos! If you like to make rolls and want to make them pretty like the rolls you get in a sushi bar, try YouTube!
My cooking tragedies
My cooking tragedies are mostly my fault. When something has come out wrong, I go back to the recipe and I've done something wrong or left something out. It's usually a 2 or 3 glass of wine night when I mess something up! LOL!!

Sauteed Apples
Made these to go with the ham for Easter. It was delicious and so easy! I couldn't quit picking at them when I was cleaning up the kitchen, even though I was stuffed!

Squash Casserole I
I made this for Easter dinner and everyone loved it. I used a whole small onion because we love onions, although next time I will saute them first. That's the only change. I'll be making this often!

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon
I made this for my mother's birthday dinner last night and it was a big hit. It is so flavorful and yummy. I added sauteed onion and garlic and didn't use the bacon (didn't want to stink up the house), and it was still so good. I also cut a pouch in my nice fat chicken breasts and stuffed them instead of pounding them out. I baked it about 5 minutes longer to be sure they were done and they turned out excellent!
