I'm twenty, a mom of a 15-month old son, and I'm happily engaged. We're currently living in a townhouse with a VERY small kitchen, but it does the trick! I'm a stay-at-home mom and even though money's tight, I love my job!
My favorite things to cook
I like to try new things. I enjoy making dinners involving chicken, but I try to change it up now and then. Pasta is my go-to favourite, because it's easy to make it different every time. When I really want to put effor into it, making my own breaded chicken is what I do best.
My cooking triumphs
I just seem to be getting better and better at cooking. To date, the best thing I've ever made was butter chicken... from a recipe I found here. It's now my absolute favorite, and even if my fiancee doesn't rave about what a fantastic cook I am, I do! I amaze myself sometimes...

Cocoa Banana Bars
It tastes great, but it's nothing fantastic. Next time I make this, however, I will be making it as a cake with chocolate icing instead of just squares. I have a great banana cake recipe I used at my son's birthday, and next to that, this does not seem that great. Nothing I would change, though, so still an awesome recipe!

Minute(R) Rice Lasagna
I am surprised at how yummy this turned out! However, next time I make this, I will double the amount of the rice layer, and possibly the cheese layer. I will also either add onions to the spaghetti sauce, or use a chunkier sauce -- and I will also add more spices. I also substituted the cottage cheese for sour cream. The recipe as-is turned out very tasty, just somewhat bland.

Rempel Family Meatloaf
I chose this recipe as my first meatloaf ever, and it turned out surprisingly well (even for my amateur cooking skills). I'm impressed. I used a spicy BBQ sauce instead of steak sauce, since that's all we had, and it seemed to work just as well. I will definitely make this again!
