About this Cook
I am half Greek and half Italian; cooking comes natural to me. I think it's in my genes, though I'm sure it helps that I absolutely enjoy cooking. My mother is an amazing cook and several Great-Uncles ran successful diners in their day. I spend several hours a day in the kitchen. I enjoy trying out new recipes as well as making the foods I am most comfortable with.
My favorite things to cook
I have such a sweet tooth and love making desserts. As for main course dishes, I make alot of Mexican-inspired foods though I am most proficient at making Italian-inspired meals.

Baked Chicken and Stuffing
This is a very good recipe and very easy!! This is what I did differently. I shredded the boiled chicken. I added two ingredients to the chicken at the bottom of the cooking pan. I added one small box of frozen peas and half of a small yellow onion, chopped. Also, I used two boxes of stuffing instead of one. It came out wonderful. The peas are a very good addition. It tastes just like a chicken pot pie. Yummy!!

Chickpea Salad with Red Onion and Tomato
Oh my goodness, this receipe is fantastic!! I prefer lime instead of lemon - and I add a ton of crushed red pepper because I love everything spicy. This chickpea salad is out of this world. I could eat it everyday. Thanks so much for such a great recipe!!!

Banana Fritters
These are really very good. I prefer them sweeter than the receipe calls for, so I added sugar like the reviews suggested. Really a wonderful receipe that will stay in my receipe box. Also, I put powdered sugar and pancake syrup on them. Yummy!!!
