Applesauce-Oat Muffins
I had big expectations for this recipe and was let down. As many other reviewers have stated there is not a lot of flavor in these muffins. We covered them with chocolate icing to help the bland flavor. I took the advice of others and used 1 tsp of cinnamon in both the topping and the mixture. I used 1 1/2 c of whole wheat flour and 3/4 c of brown sugar. I even took the advice and added nutmeg to the topping and that still didn't help. I just hope the kids will eat these in the morning for breakfast.

Chicken Stir-Fry
This recipe was absolutely delicious. I took the advice of others and added the cornstarch to the water and added it at the end. I didnt have bouillon granules so I used half a bouillon cube that I added w/ the broccoli, carrots, and onions. I had a bag of mixed frozen california baby vegetables that I used and left out the celery. I also took the advice of others and doubled the soy sauce mixture and added brown sugar to it. I found the sauce to be too thick so I added an extra cup of water and that made it perfect. You also don't need to use oil because you can spray the pan before you stir fry the food. The family loved it and we're having it for dinner again tonight :-).

Chicken Pasta II
This recipe is delicious there is a lot of flavor and anytime you have bacon and chicken together its sure to be a hit. At the advice of others I added about a tsp of minced garlic to the chicken. I also used about 1 1/2 cups of chopped grape tomatoes. Instead of using wine I used chicken stock. Will definetely make this again.
