Easy Red Beans and Rice
This was pretty darn good! I ended up using smoked sausage - but would like to track down some andouille sausage for the next time I make it. To make it more authentic, I didn't use the tomatoes, I used 3 cloves of garlic, and I added some chopped celery and Cajun / creole seasoning. I also used 4 cans of red beans and made sure to smash some of them before serving (I used a potato masher - but you could also just smash some on the side of the pan with your spoon)

Microwave Popcorn
How awesome this is! I had no idea I could make my own microwave popcorn! I made it last night with olive oil - but will try with no oil next time. When I tasted it right out of the microwave with just salt, I was kind of put off - because I'm used to eating my "extra butter" flavored microwave popcorn. Needless to say, I poured some melted butter over it and it was delish! I think I actually used too much butter - so I will use less next time. I'm sure I will make it "just right" after a little experimentation.

Baked Scallops
I made half a batch last night for myself for dinner and I'm sitting here eating the last few cold for breakfast. I ended up using Panko bread crumbs and I'm happy that I did. Honestly, though, I probably will never use this recipe again. The breading, in my opinion, is just not necessary. I personally prefer my scallpos sautéed in butter on the stove top.
