My First Love...
About this Cook
Once upon a time I had an exciting career that allowed me to travel around the world and taste different foods....I never had the time or want to make them!! Once I got married and had a baby, it became a new hobby. I'm constantly looking for great recipes I can add my own flair to, to make them excellent!! Aside from cooking, I love spending time with my family, shopping (of course) researching the internet, and driving around. There are so many things we take for granted everyday, and I don't like to spend my days with the baby cooped up in the house; I want him to see and appreciate this world the way his Daddy and I do!
My favorite things to cook
We're pretty big fans of Mexican food, so enchiladas, tostadas, quesadillas, and nachos are some of my best. Since finding this site, I've also discovered I make a mean lasagna! Filet Mignon & Ribeyes are truly our favorites! (I love to experiment with marinades for meat and let them sit overnight) Now that I've figured out the charcoal grill, I'm having fun with all types of meat, vegetables, and skewers on that.
My favorite family cooking traditions
Anything that comes from my Grandmother (Who is still based in Florida) My Dad also makes a great vanilla pudding with vanilla wafers...one day I'll be submitting his recipe!
My cooking triumphs
My first cake I didn't make straight out of a box; it was a double layer cake (I had to improvise with a pie tin!!) It tasted delicious, and didn't fall in the middle!!
My cooking tragedies
When I first started cooking I didn't realize you have to peel the garlic when using it in recipes...and I'd heard a lot of people use garlic in most of their dishes. I was just dropping the garlic into the pot whole, not realizing what "mince" or "dice" meant....I think I cut the garlic up with the skin on, and once we took one bite, we knew something wasn't right! That whole dinner was a disaster, and ended up in the trash!

Cheezy Potatoes
This recipe was really good, almost tasted like my "loaded maashed potatoes. It was great with a few modifications: I peeled my own potatoes instead of using frozen has browns (about 9) and boiled them on the stove in water for about 30-45 minutes. Once they were cooked and drained, I mixed all of the ingredients together and substituted a can of cream of mushroom for cream of potato. I also added bacon bits and salt and pepper to the mixture. I only had to bake them for about 20-25 minutes since the potatoes had been boiled. Really delish! Hope this helps!

Simple BBQ Ribs
This is an awesome recipe! They were so easy to make...and so delicious to eat! I Did make a few changes: I boiled for about 2 hours and then cooked in the oven for right at an hour. I also used pork baby back ribs, (Farmer John's) When boiling, I ground pepper and sea salt, and added garlic and onion powder. I did use a lot of seasoning, probably a good 2 or 3 tablespoons of each. I also used a big lobster pot to boil them in. I live in CA but found that the most amazing barbecue sauce to use is Sonny's, which you can order online at their website or if you're lucky enough to be on the East Coast, go right in to the restaurant to get it. I used the sweet sauce, but they also have mild and tangy. Some reviewers basted their ribs many times - I found that I only needed to do that twice. I cooked them in the oven for 45 mins, flipped them, recoated with sauce, and cooked another 15 minutes. This is one of the best rib recipes ever!!!!

Fried Ice Cream
Wonderful recipe! I stuck the frozen ice cream balls on wax paper in my freezer instead of using a cookie sheet, and also substituted frosted flakes for corn flakes....the end result....fabulous!!
