Cranberry Mango Bread
I altered this recipe considerably to make it semi-healthy, and it turned out quite yummy. I used the same above ingredients & measurements with the following exceptions: I split the 2 1/2 cups all-purpose flour with half (1 1/4 cup)whole wheat and half all-purpose flour; I substituted the sugar, orange zest and mango with: two mashed bananas, a 1/8 cup splenda, 1/2 cup unsweetened applesauce, 1/4 cup orange juice; I also added 1/4 cup semi-sweet mini chocolate chips.

Oven Pot Roast
Pretty good. I added potatoes and baby carrots to the ceramic pot too. I roasted my 1.9 lb rump in a convection oven for an hour an a half; it came out medium done. I think a more expensive cut of beef probably will make a more juicy roast; but still this was pretty good. The gravy was great!

Dietetic Banana Nut Muffins
For "guilt-free" muffins these are great! For those expecting rich Starbucks banana nut muffins, keep dreaming... But these are very tasty fat-free muffins. I added chopped walnuts to the final mix, and they turned out delicious! Perfect with my morning coffee.
