Chicken Penne al Fresco

For ease, this recipe deserves a 5 or more. Taste was probably a 3 for me. I was tempted to add onions but decided to make it as written. The colors were pretty and the taste was good but the flavor had no depth. I think it would be good with onions and a splash of white wine. Maybe even mushrooms. It is 104 degrees here today so I really appreciated a recipe that could be done in the microwave. Thanks!

Shrimpcargot

I made this recipe as stated and liked it but had some problems. My mushrooms didn't cook through. The amount of butter/garlic was perfect and gave a good flavor without being greasy. My guests and I had trouble eating them. I'm not sure if it was because the shrimp were as big as my mushroom caps or not. Next time, I would chop the shrimp. While these had a nice flavor, I kept thinking something was missing. I think maybe some bread crumbs and either bacon or a splash of lemon. I enjoyed them and they were all eaten but I just think it needs an extra tweak to take it to 5 stars for me. Thanks for the recipe and I'm glad I finally got to try them!

Cheesy Chicken Poblano Chowder

This a good simple recipe. I followed the recipe even though I was tempted to add some sauteed onions. The recipe is fine without them. The flavor is great. My only problem was that the cheese just clumped and did not melt smoothly. I think next time I will increase the peppers to 4 or 5 and then just sprinkle cheese on top.

Mexican Rice III

I love this rice! Just don't get carried away with the jalapeno like I did! I used one large one and it is HOT even though I seeded and deveined it! I followed the recipe except for one thing. I did not have a tomato so I used 1 can fire roasted diced tomatoes. To counteract the heat from the jalapeno I stirred in a chopped avocado and am thinking I may need to top with some cheese to help cut the heat even more. Regardless, the flavor is delicios and my house smells great.

Shredded French Dip

This gets 5 stars for ease and for flexibility. Taste wise, I had to add some garlic to spice it up a bit. My husband ate it on a toasted french roll with provolone cheese and peppers. I ate it as is. For leftovers, I stirred in some sour cream and had stroganoff. Yummy!

Carnitas with Pico De Gallo

This recipe was super easy to put together. I was a little scared by a whole cup of cumin but it worked out fine. Suprisingly, even with the peppers, the meat wasn't spicy enough for us. I think I would increase the jalepenos next time or maybe add some cayenne pepper. I followed the recipe except for I had to add salt to the meat mixture. I couldn't imagine cooking meat without it. I added about a tablespoon of salt and some black pepper. I started my meat out frozen. I accidentally cooked on high 3 hours longer than I was supposed to when I fell asleep! I cut back on the low temp. time by 3 hours due to this mistake. The meat was very tender. For us,the taste was a 3 and ease was a 4. If you don't like things too spicy it should be perfect as is. Thanks for sharing it.

Dilly Chicken Sandwiches

I loved how this tasted and it was pretty too. Very easy to make. My husband fed his to the cat and asked me to make something normal tomorrow. I liked it enough for both of us so it gets a 5 from me!

Southwestern Lentil Salad

This was good. My husband who "doesn't like lentils", ate it and didn't even notice they were there. I used the cilantro. I kept feeling like it needed some extra color. Maybe red peppers instead of green next time or possibly tomatoes.

Cilantro-Lime Dressing

This is delicious. I almost didn't review this because I had to leave out the ginger. Ginger has a strong distinct flavor so I feel a little strange about reviewing with such a big change. My husband hates ginger. I decided to go ahead and review though because it is so good even with out the ginger. I am not big on sweet dressings so I cut down on the honey a bit just do to personal preference. I have not been able to stop thinking about it. Wonderful flavor!

Lemon Butter Chicken

I made exactly as directed and the chicken was very tender. I agree with others who said it had a strange taste. I kept thinking it would have tasted better if I had left the italian dressing out. My husband and I both ate it but agreed we didn't want to have it again. On the plus side, it was easy to make.

This was so yummy and fluffy. I followed the recipe as is except my Tablespoons of onions were heaping and not level. I did the alternate method of half chicken broth and half water. It was really good.

Cowboy Mashed Potatoes

This dish is not only pretty with all the different colors but it is tasty too! My husband and I were raving about how good it was when I remembered I forgot to add the cheese. It tasted fine without it so we left it out but next time I will add it in.

Amy's Cilantro Cream Sauce

This is the best sauce!!!! I love it. I would give it 10 stars if I could. I can't wait for my husband to get home and try it. I had to omit the celery salt because I didn't have any but otherwise followed the recipe exactly. It will be my new favorite thing to make. Thanks for sharing the recipe.

Frosted Banana Bars

These were really tasty. I did sprinkle in nutmeg and cinnamon just because I'm used to those flavors with bananas. I made homemade cream cheese icing. My son loved the bars but not the icing so I did half with icing and half without. Both were equally delicious.
