About this Cook
Im a stay at home mom who loves to cook. I've loved experimenting in the kitchen since i was little. I try to make meals that suit my "eat anything" palate vs my husbands "dont like this, dont like that" palate. I absolutely love cooking for gatherings. I would probably be that one volunteering to bring a dish while everying hides in the corner.....I love cooking traditional and authentic mexican dishes that were passed down in my family, but i also look for ways to make them faster and more simple, without taking away flavor. I love finding new mexican recipes to play around with, and love trying to make up my own little twists on the favs...
My favorite things to cook
my favorite things to cook, are my lasagna, and homeade flour tortillas, of course the awesome comfort foods, like meatloaf and fried chicken. I love making enchiladas, tacos, and tamales. I love exploring ethnic foods and experimenting. I would have to say my fav foods are mexican and italian. I love a good slow cooked pasta sauce.

Lots of baked goods every holiday, and Tamales in the fall.
My cooking triumphs
I truimph over just having a super flaky pie crust, or delicous pasta dish, or just seeing my family enjoy the food, and getting enjoyment out of making it. But i gotta tell ya, my best triumphs are when I get to go all out and make a gourmet, fancy smanchy meal! lol

Simple Carnitas
Very Good, made twice, and I liked it better in the slow cooker!! Plus dont trim the fat, because it gives it such an awesome authentic flavor that is carnitas signature trait. I also seared the roast on all sides before putting in the slow cooker for more flavor...I only used half the orange, squeezed the juice, and left the peels in there. I didnt put it in there in chunks either, I just let it cook on low for about 10hrs and shredded it, removed the large pieces of orange, and onion, and returned to the juices before serving.....Very good.thx!

Artichoke and Sun-dried Tomato Chicken
This is how I turned this bland dish FABULOUS! Ok, I seasoned the chicken with salt, pepper, garlic powder, then browned in olive oil, removed from pan, and added chopped onion, garlic, and sauteed. then added the REG diced tomatoes, with a tbs of italian seasonings, and salt pepper, crushed red pepper, and some sugar. I added chopped artichokes, NOT the marinated, and the pesto, AND some chopped sundried tomatoes. I added the chicken back to the pan and let simmer until cooked through on LOW. Meanwhile I cooked angel hair pasta to go along with it. Served the chicken and sauce on top of a bed of pasta, with garlic bread YUMMY!!!!

Burrito Pie
OK, I read all these negative reviews before Making this. To eliminate the "mushy" texture I didnt add refried beans to the mixture. I simply bought two small cans of pinto beans, rinsed and cooked them with salt, pepper, garlic powder, and chili powder, and added the can of diced chiles with them, and a little water. Once boiling I smashed them and smeared them on the tortillas. I doubled the layer of tortillas so the tortillas wouldnt end up a mushy mess. I also used a cheesecake pan. I added a lot of seasoning to the ground beef, like garlic powder, onion powder, oregano, chili powder, cumin. I drained the canned tomatoes well before adding. I just added chopped jalapeno for heat when I was cookin the onion. I added MORE cheese. In between the layers. I mixed half a small can of enchilada sauce with half the bottle of taco sauce, BIG DIFFERENCE. i poured the taco sauce in the layers instead of mixing with the meat. It came out way better this way, and we topped with sour cream, lettuce, and guacamole!!!
