Thai Chicken Curry in Coconut Milk
Substituing salmon & baking this dish in the oven @ 375 for ~25 min. brought me back to Hana, Maui where I first had it. We like to eat it with rice so I make sure it has enough coconut milk to accommodate. The chicken version sounded dull but with substitutions I give it a 5.

Buttermilk Biscuits II
Loved 'em. Review #1 is right, they are sweet, but that doesn't detract from the overall flavor. The recipe called for self-rising flour which I have never used. I accommodated by using 2 tsp. baking powder and adding salt. They turned out very wet and huge. The flavor is very good and baked solid, but still moist. Next time I will add a bit more flour and make more than only 4 bisuits out of the batch.

Squash-Apple Bake
I baked this for the recommended time and temp, but it didn't bake down well and the apples were drying out. I covered the dish and it baked down very well... I didn't have any mace so I substituted nutmeg and cloves. Not only did it make my house smell wonderful, it tasted awesome.
