Coffee Shake

Needs more coffee- more ice- more sugar! But then it was good. I didn't have syrup so I added a small handful of chocolate chips. Second cup: I substituted a packet of hot chocolate mix for the sugar/chocolate and put in two packets of granuals- Yum!

Salsa Chicken Rice Casserole

Not exceptional but not bad at all. Very basic recipe, tastes mostly of cheese and salsa. The only changes I made was to saute my onion first as it was a little pungent and to oven bake the chicken breasts.

Delicious Black Bean Burritos

Good but not fantastic. They really need the cilantro or they won't have any flavor. I think I'm going to add cumin to the leftovers and maybe some diced tomato to punch it up a bit.

Lemon Streusel Muffins

These really aren't rocking my socks off or floating my boat. I made them exactly to recipe (even full fat!) and while they came out fluffy I really just wasn't terribly impressed with the flavor. It doesn't help that all my streusel topping falls off as I try to eat them- I even tried to smush it in a little with the back of a spoon before I baked. Not worth the effort, I will try another recipe next time.

Panzanella Salad

Great! I didn't have hard bread so I made my own by baking some sandwich bread until it was hard like croutons and then using it in the recipe. I also roasted the garlic a bit just to make sure it was cooked. Fresh mozzarella made this soooo good. I will put in more mozzarella and less olives next time I think.

Excellent! I added frozen peas (just so there's some veggies in there!) and an extra egg for the heck of it and it was soooo good! We went back for seconds and put it away so that we wouldn't fight over thirds...

Hummus III

ADD WATER! Or bean liquid. Or something like that. I put in ingredients as directed and just kept going in my food processor and it was chunks. So I added more oil and it was still all chunks. Then I added water and presto! It became a paste. Very yummy, very authentic, after you have it blended you can tweak as you like (I like it kind of lemony).

Greek Pasta with Tomatoes and White Beans

I found a couple things missing from this recipe- namely the oregano, basil, and garlic in the description! I added five cloves of garlic browned well in olive oil and a healthy smattering of oregano, basil, crushed red pepper, and salt. Very good- hubby liked- I will make again.

Beer Butt Chicken

Oh my goodness I cannot express my love for this chicken. Tender, moist, flavorful...mmmm. Make sure to peel the skin up and get some of that buttery spicy goodness under it- you won't be sorry. I used some sage as well as the recommended spices and put it in my 350 degree oven for two hours. It was falling apart tender and my husband and I could hardly stop eating it- and he kept telling me how good it was. Yum!

Jackie's Sausage Soup

Excellent! My husband went back for seconds. I added more garlic than called for and sauteed the onion, garlic, and pepper a little, then cooked up the sausage, and then added the tomatoes, broth, etc. I also used a pound of fresh baby spinach that I chopped up instead of the frozen. Yum!

Chocolate Chip Banana Muffins

I just ate the last one and I'm sad that I don't have any more- very good! I used three very ripe bananas. I cut calories by using only two tablespoons oil and adding a quarter cup of unsweetened applesauce. My husband bought dark chocolate chips which had me concerned but I thought they worked wonderfully. All I can say is Yum! (EDIT: these are our Favorite muffins now- we buy bananas just to make them!)

Chicken Rotini Stovetop Casserole

Pretty good- this is basically like an alfredo sauce with chicken and peppers. I used two whole peppers because I'm always for adding more veggies and used fat free evaporated milk instead of the half and half. Also, this recipe CAN be made in two pans, not four! One for pasta, and one for everything else.

Cream of Mushroom Soup I

I made it a little differently because I have an aversion to the texture of mushrooms cooked in broth. I fried them up with a little butter, took them out of the pan and made the roux, then added them and the broth back in. I used a lot more wine than they called for and I subbed half and half for fat free evaporated milk. Perfect!

Three Cheese Garlic Scalloped Potatoes

Great! I couldn't get the potatoes to cook through for the life of me though. Next time I'll give them a quick boil first. Also, to make it lighter I mixed together fat free sour cream with some milk until it was the consistency of cream.
