Six Can Chicken Tortilla Soup

Did what others suggested and swapped a can of cream chicken soup for one can of broth, used left over chicken from our "Roast chicken with rosemary" recipe on here, and doctored it up with chili powder and cumin. Easy and delicious.

Roast Chicken with Rosemary

THis has become a favorite at our house with a few adjustments based on reviews. Stuffed chicken with a couple cloves of garlic, a quarterd lemon and half an onion. Rubbed skin and under skin with a kosher salt/herbs de provence/pepper mixture. Baked it on a rack UPSIDEDOWN with breast down allowing all the yummy dark meat juices to moisten the meat and keep skin crisp. The best roast chicken!

Turkey Pot Pie I

So yummy. Did what other reviewers suggested and used refrigerator pir crust and let liquid filling cool a bit before pouring into the crust and it came out great.

Chicken and Dumplings III

Awesome base for a recipe, but I made changes per various reviews. Use one can cream chicken and one can cream celery soup. Use a carton of chicken broth to cover chicken when simmering. Also added a chopped onion, two celery stalks sliced, two carrots sliced, clove garlic minced and about a tablespoon poultry seasoning. Turned out awesome! Definitely a new favorite in our house.

These were a hit. Doubled the recipe and froze them. Added a couple grated apples per the suggestions. Also added 1/4 cup flax meal and a little less flour. Yum!

Easy Slow Cooker French Dip

Was wonderful! Everyone loved it and it was super easy. Took advice of other readers and doctored it up a bit with some garlic, onion powder, thyme, dash of salt, worchester sauce and pepper. rubbed some montreal steak seasoning on meat also before cooking. YUM!

I have been searching for a salad dressing recipe like this forever. This was GREAT served with egg rolls, pot stickers, chicken and rice. I would half the recipe next time...made way more than I could use.

Chocolate Meringue Cookies

So yummy, light and great for me gluten intolerant friends. Huge a hit at a girl's party! I added another tablespoon of cocoa as suggested by others and would probably omit chocolate chips next time. Served with fresh strawberries and whipped cream! Wonderful!

Amazing Chicken

One of my hubby's new favorite recipes! Be sure to use regular mayo and not light mayo...seemed to be less crispy with the light. try cutting the chicken into strips first fro yummy chicken fingers (and a quicker cook time!) Also took suggestions of others and doctored up the bread crumbs and mayo with all purpose seasoning, garlic and Parmesan cheese. Yum!

Lime Chicken Soft Tacos

This was a wonderful chicken taco recipe. My hubby can't eat tacos with those taco seasoning packets, so it was great to find something flavorful and simple to make! I doubled the "sauce" and precooked the chicken in the George Foreman grill, shredded and threw it into the pan. Definitely a keeper.

Chocolate Chip Orange Zucchini Bread

I made a few modifications to the tastes of my family. Omitted orange, nutmeg, and nuts. Doubled cinnamon and added one cup chocolate chips. Was a big hit! Great recipe!
