Kerri's Holiday Punch

We had our annual Holiday Open House last night. This is a big event for us - 70+ people. We made 3 batches of this - it was a huge hit with men and women. It is not sweet and it goes down really well/quickly. I can see where this would work well at holiday parties as well as in the summer for BBQ's. We did not put the cherries in - those would sink to the bottom. We also did not put in food coloring, but used the juice from jars of cherries instead. Fantastic recipe - super easy to mix up. Definite keeper & a repeat!!!

Zucchini Bread IV

We all love this recipe - kids incluced. So much so that the KIDS have been begging me to make this again. Like others I make slight modifications - add 1/2 tsp nutmeg to the mixture and use whatever zucchini I shred up. I let the batter sit in the pans while I make the topping which for whatever reason I think helps make things come together better. For the topping I use 1 cup brown sugar, 1 cup flour, 6 tbsp butter (we now only use Promise in our house), 2 tsp cinnamon, 1/2 tsp nutmeg.

Roasted Pumpkin Seeds

Cleaned seeds then boiled in heavily salted water for 20 minutes. Mixed with olive oil, garlic powder & Italian seasoning. My kids love pumpkin seeds & don't want to wait 24 hours so I don't do any of the drying out overngiht that others suggested. Just plan to bake them longer. YUMMMMM!!

Arlene's Shrimp Dip

This is good & definitely easy to make! I've made it twice now & have had to add a lot more of the Miracle Whip so that it didn't seem too dry & would spread better. First time I didn't have minced onion & used onion powder. I liked it better the 2nd time with the minced onion, but not a huge difference in taste. Plus this got good reviews from the people at the party. THANK YOU!

Corned Beef and Cabbage

Super easy - great recipe!! Couple of changes. As others said, I put the corned beef on the bottom of the crock pot. I've made this a couple of times and found the brisket worked better than the round. Make sure to add more water so that the brisket / round is completely covered. I used baby red potatoes so that I didn't have to peel them; cut the potatoes in half. Chopped the garlic in a mini food chopper vs mincing. Adds more flavor. Used red wine vinegar every time I've made this. And, to make it less fatty or more diet friendly trim any visible fat off before placing in the crockpot (WW trick!). Don't forget to use the Reynolds crockpot bags for easier cleanup too!

Cocktail Wieners II

I use 2 bottles of chili sauce (24oz total) + 1 jar of grape jelly (18oz). Warm in a pot on the stove to blend the 2 together. Pour over the wieners in a crockpot & let them warm together. Longer the better I think. Never have any leftovers. Very easy!

Pumpkin Turkey Chili

Not 5 stars only because I changed the original recipe per the other reviews - fabulous base recipe. We were having a decent number of people over for a Halloween/birthday party (24) so, I doubled the recipe. For the spices I used 3 small onions, 10-12 garlic gloves (chopped in mini food chopper), 3 generous TBSP chili powder, 2 tbsp worcestershire, 2 bay leaves, cumin and 4 cans of flavored diced tomatoes (basil & garlic) with the juice. Also, I put some water (less than 1/4 of a can) in the cans to get all of the juice out & poured that in too. No peppers, beans or corn due to dislikes (mine & husband's). Simmered it for a little bit in a large pot and then transferred to a crock-pot to keep warm, serve at the party. Had bowls of sour cream and sharp cheddar cheese on the side. It was a HIT - we have none left. People were amazed when I told them there was pumpkin in it!! It was not overly spicey which I think worked well given the large number of people with varying likes/dislikes.

Baked Chicken and Brie

Very easy! Since it was just my husband & I, I cooked 2 chicken breasts. And, I used Chardonnay. I sprayed the cooking dish before adding the wine. I liberally covered (ie didn't measure the amounts) the chicken with salt, pepper & oregano. Next time I will remove the outside of the brie to help it melt better, look nicer. This was a hit!!

Acorn Squash

Easy to make and great reviews / suggestions! I followed the microwave suggestions (5 min on high, upside down with 1/2 cup water). And, then transferred to the oven after coating the edges & inside with 1 tbsp of butter, nutmeg, cinnamon and I used 1 tbsp of brown sugar. Since I was cooking something else at 400 that's the temp I used, but didn't go as long. Maybe 10 min. Delicious!

Caramel Apple Jam

Putting the apples through a food processor after peeling/coring is definitely a time saver. I have made this twice now - great reviews from everyone, young & old. Nothing like kick starting your morning with an applie pie taste to your toast. :) I get 7 jars of jam from this recipe. THANK YOU for posting this!!

Apple Bread

This is really a great recipe. Thanks for posting it and thank you to all of the reviewers! I followed the suggestions to use 1 1/2 cup sugar + 1/2 cup brown sugar. I also added 1/2 tsp nutmeg. YUM!! The batter is thick, but definitely manageable. I didn't notice a huge difference in the cooking time, maybe 5 min.

New Red Potato Salad

This recipe is GREAT! It gets great reviews from everyone and I love it for the simplicity. I followed some of the other reviews & added salt when boiling the potatoes and doubled the amount of salt & pepper in the mix. Tastes just as good without the green onions too.

Garlic Broccoli

You need to be a garlic lover to enjoy this recipe. I liked being able to use fresh broccoli, but next time I will cut back on the amount of salt and the amount of garlic.
