Spinach and Rice Alfredo
OMG! SO good. I am not a huge fan of rice, but my husband is, so I figured I would try this recipe to change things up. We both declared it the BEST. We can not stop eating it. I love creamed spinach but my husband could care less, this combines the best of both worlds and we both think it is so delicious. I used a 10oz bag of fresh spinach, added an onion, used light cream instead of heavy and made one cup uncooked rice. This gets two thumbs up and will be making a regular appearance in my weekly rotation. An easy and tasty way to add veggies in our diet

Chicken Florentine Casserole
I made this for my husband who is on a low carb diet. We both loved it! I did modify it somewhat based on what I had on hand at the time. I cooked onion and garlic, then added the ingredients to make the sauce, used a whole bag of fresh spinach, shredded rotisserie chicken, added some uncooked broccoli and used shredded pepperoni as I didn't have any bacon, combined it all together in a 9x13 casserole dish and sprinkled the top with grated mozzarella cheese and baked. We loved it!

Savory Grilled Potatoes
My husband said these were the BEST potatoes he's ever had. I really liked them but next time will add more garlic and a tad more salt and pepper. The only change I made to the original recipe was that in addition to parsley, I added cilantro as we really love it and add it to almost everything.
