Cherry Cheese Pie I

Cha Cha's White Chicken Chili

This was delicious! We had to mild it down for the kids, but it was still fabulous. Just subbed green chiles for the jalapenos and just a dash of cayenne. So tasty.

Maple-Garlic Marinated Pork Tenderloin

Much to my surprise, I didnt' care too much for this recipe. it was too sweet for me. It has a lot of promise though; I think next time I'll try it with the addition of some soy sauce in the marinade. I thought it really needed something to balance out the sugars.

Caramel Apple Pork Chops

Loved the flavors but the pork was dry, and there wasn't much sauce to speak of. I didn't double or triple the sauce ingredients as recommended by other reviewers, and I will definitely do that next time. I think with modifications this could be really good.

Garlic Mashed Red Potatoes

I am not a big mashed potatoes fan....but I absolutely loved these!!! I substituted russet potatoes for red, and freshly grated parmesan for the romano. Yummy!

Creamy Spinach Soup

Pasta with Scallops, Zucchini, and Tomatoes

This was very good. I added mushrooms and green onions, and also seared the scallops separately since I prefer them cooked that way to bring out their natural sweetness. Very tasty!

Eggplant -- Easy, Good and Tasty

I love eggplant, and I was looking for a really good recipe that would highlight the taste while not covering it. Unfortunately this recipe, while it sounded promising, did not really deliver that for me. I thought it tasted like "eggplant paremesan light" which is probably great for some people, but just not my taste. The good thing was that my husband, who really dislikes eggplant was able to eat this and enjoy it!

Carrot Cake III

I don't make carrot cake often but I needed a good recipe for a friend's birthday cake. This one was awesome! I made 2 changes, for the cake I used 1/2 brown sugar and 1/2 white sugar instead of all white sugar, and to the frosting I added 1/2 stick butter (I made it as written but it was too sweet for my taste; the extra butter did the trick). Wonderful!

Irish Whiskey Flat Iron Steak

We all loved this! The marinade was so....... good. Thanks for the recipe. Tried this again using new york strip instead of flat iron steaks. Again, FANTASTIC!!!! I am not a big steak fan but this marinade is incredible.

Pan Seared Scallops with Pepper and Onions in Anchovy Oil

I'm still reeling from how absolutely delicious this dish was! We prepared it just as written, and it was fantastic - I was leary of the anchovies but they deepened the flavor without overpowering the scallops at all. The one issue we had with the recipe is that if prepared as written, the scallops are not necessarily seared on both sides because the water from the peppers prevents the browning of the second side. Next time we might try searing both sides before adding the peppers, maybe even removing the scallops once cooked and then adding the pepper mixture, then mixing it all together at the end.
