Jamie's Cranberry Spinach Salad

This recipe was so delicious, but there are a couple of things that I would like to mention. I used the toasted and flavored almonds that are found in the salad aisle instead of toasting them myself. I have 3 kids. I don't toast nuts. I also reduced the sugar as suggested in some reviews. I only used 1/4 c. Also, this made WAY more than 8 servings. More like 20. I would make this again in a heartbeat. In fact, I served it at a ladies dinner, and have had several calls requesting the recipe.

Sweet Potato Casserole II

I know I'm in the minority, but I really didn't enjoy this recipe. I followed the directions to the tee, but the combination of orange juice and marshmallows was too sickly sweet. None of my guests liked it, either. It was the one dish that was left on each of their plates. If you like a spicy, nutty, grounded dish, this is definitely not for you.

Pumpkin Pancakes

Oh. My. Gosh. These pancakes were the best ever. My picky husband and even pickier kids all loved them! I took the advice of another reviewer and added an extra tablespoon of brown sugar, as well as 1 t. vanilla. Trust me, you're going to love these!

Amazingly Easy Irish Soda Bread

I tried this recipe as a last-minute addition to our annual St. Patrick's Day dinner. I am so glad we did! It was absolutely delicious--tastes like a huge, buttery, moist biscuit. Mmmmm... Next time I will be sure to be more diligent about basting the loaf with the butter/buttermilk mixture as it bakes. Mine got a little bit too crusty for our taste.

Lemon Poppy Seed Bread

The bread was OK, but I won't make it again. I followed the recipe exactly, but was disappointed. I had hoped for a better result. The bread was very heavy--almost gooey, and the lemon flavor wasn't strong enough. Some of my friends who tried it liked the sweetness of it, but most said they preferred more tart lemon flavor and a lighter bread/cake.

Vanilla Ice Cream IX

We really loved this ice cream. It was so easy to make, and the vanilla flavor was really refreshing. I thought it tasted a little bit weird with chocolate on it (because of the lemon), but it was delicious enough to stand on its own. I originally let it ripen in the freezer for a couple of hours, and it was good, but when we tried some a couple of days later, the flavors had really blended and the ice cream was even better than the first time.The ice cream had firmed up, as well. My ice cream maker is the Cuisinart, so I cut the recipe down to 8 servings. There was some room in the canister, so I will probably make 11 servings next time. Overall, the taste is really impressive for the lack of effort needed.

Hawaiian Chicken Kabobs

This chicken was good, and my family liked it quite well. The only reason I wouldn't give it five stars is that it just didn't have that extra "oomph" that I look for in a recipe. That being said, it is a good go-to recipe that is hard to mess up.

Barbequed Ribs

Are you kidding me? I have to admit that I'm not usually a fan of pork. In fact, my husband had to talk me into trying just one bite. But once I did, I just couldn't stop! I doubled the sauce recipe and used it all to baste the ribs, as suggested, and it turned out perfect. I'm already looking forward to showing off this crowd-pleasing recipe at our next party.

Grilled Salmon II

I made this recipe for my book club and it was a hit with all of the ladies. Even my husband, who claims to not like salmon, really enjoyed the leftovers. One caveat--don't marinate for too long, or it will discolor the fish too much.
