Chinese Roast Chicken with Gravy

This recipe was certainly easy to do. It seemed to cook a bit faster than I anticipated but I caught it in time so it was still very tender. I must have put too much chicken broth in the pan early on because when I tried to make the gravy it didn't thicken up well, but it was more of a light sauce and still tasted very good. I put a little brown rice and a salad on the side. It was great even the second day.

Kiwi Strawberry Smoothie

I tried this and needed to make some minor variations based on what I had in the house at the time. I used fresh fruit like it called for but needed to use plain low-fat yogurt rather than frozen, but used another reviewers suggestion to then add ice. I think it turned out good. I haven't ever been much of a smoothie fan just because of the consistency, but I made it for other people and they seemed to really like it. I will try it again with the recommended ingredients.

Whit's Chicken Enchiladas

Loved it! We made it without having every listed ingredient and it was still wonderful. We skipped the cream cheese all together as well as the heavy cream. I think my husband put in a spoon of sour cream instead. We used 2% milk at the end instead of heavy cream. Clearly this is a lower calorie version but incredibly tasty. We decided to make it again the following week and used smaller tortillas which we liked more. A must have!

Easy Company Chicken

Yummy and a nice change of pace from the regular old chicken dinner. I love curry, and even though I made it with 3 tsp it could have used a bit more. Otherwise I made it pretty close to the recipe...maybe a little less mayo and soup. I thought about putting the chicken broth/stock in, but thought I would try it without the first time. It was thick and we liked it. My husband would have preferred it over noodles but I loved the brown rice with it. I cut the chicken into long strips which made it easy to flip in the oven and also looked nice when serving propped up on a bed of rice. Served it with broccoli. I will make this again and try a couple other variations based on other reviews.

Chewy Granola Bars

Having never made granola bars before I think they turned out quite nice. I made a smaller batch, using an 8x8 baking dish which made 16 nice sized squares. I melted the butter which I think helped make them come together well. I also put a 1/4 cup of wheat germ in and lessened the oats by that amount. I too think they are sweet, but that is probably because of the choc. chips. Next time I think I will add/substitute almonds and craisins. I found them only to be crumbly a tiny bit. Mostly when my 3 year old was gobbling it down. I have added it to my saved recipes. Thanks!

Chocolate Pretzels

On the easy chart, this is certainly a 5. I do agree with another post that the chocolate can look a bit wrinkled/cracked. I put less in the oven at a time so I could attend to each on more quickly to prevent this. I also tried using the Kisses with caramel and found the caramel was too goopy and lost the cute shape. However, I did try adding a large walnut or pecan half to these rather then an M&M and it didn't seem to be as crucial that the shape was not so perfect. Some were concerned about the cookies sticking, and I will say my best baking friend is Parchment paper. It works so well and can go back in the oven on a cookie sheet repeatedly. Try it! My 3 1/2 year old loved helping with this recipe.

Chicken Breasts with Balsamic Vinegar and Garlic

Very tasty and moist. I made it exactly as directed though we only had canned mushrooms on hand, but I think over all it had the same taste. We will try fresh next time. I paired it with oven roasted red skin potatoes mixed in olive oil, rosemary and kosher salt and pepper. We also had steamed string beans. It was a nice meal, easy to prepare, and I liked having it all ready to go in my pantry.

One Bowl Brownies

I just cut up my first batch and my 3 year old and I love them. I had the unsweetened chocolate package where the recipe cam e from. I took a comment from a review to cut out some of the sugar so I only put in 1 1/2 cups. One thing that may be confusing to some of the people who've been rating this is they may have not put in the correct amount of chocolate to balance out the sweetness or butter. The box reads that "one square" is really the 2 pieces connected, like a bar of chocolate. So to use "4" in this recipe is really using 8 individual squares. My batter was very dark brown and tasted great before I baked it. Those worrying about raw eggs should relax. It is always a good idea to taste the batter so you know what kind of flavor you'll end up with. Mine turned out likely crisp on top and nice and fudgy on the inside. I had some extra choc. chips so I carefully sprinkled them on top right before going in the oven. Adds a nice decorative touch. Also, I used both the tin foil and PAM. Worked great. I will make this again.

Buffalo Chip Cookies

This is a great recipe...and it makes a boat load of cookies! I started calling it "The Kitchen Sink Cookie" since I was using every ingredient in the house, and then some. I was running shy on some and did some substitutions and they still turned out great. Since I didn't have Bran Flakes on hand I used pulverized granola and then some wheat germ. I didn't have any nuts either, but the golden raisins were excellent with the choc. chips. The batter got so thick after adding all the dry ingredients I felt like I got my workout for the day. I took about 2 doz. to our 4th of July party and they vanished. I was able to take even more to work the next day. I still have a dozen in the fridge and more in the freezer! I will make this recipe again. Hopefully i can try it the way it was meant to be made.

Orange Bundt Cake

I made this recipe for a baby shower gathering. I borrowed a friend's bundt pan, which is a standard size. It didn't even occur to me the recipe was to serve 6. (What cake ony serves 6?)The cake mix barely filled the pan. It was the tiniest cake ever. I followed the directions exactly on the cake, but my mother needed to alter the glaze by thining it down. She thought it was too thick to drizzle. All in all it turned out nice, but I was still surprised how little the recipe made. I had to back it up with 2 other desserts.

Lazygirl's Ground Turkey Stroganoff

This recipe tasted really good, but like many others, I altered the recipe. I sauteed 1/4 onion with one clove of garlic in some EVOO. I transferred it to another dish and cooked up the ground turkey. After that was cooked I added back the onion and garlic, then used a 1/2 can of cream of chicken soup, 3/4 cup of light sour cream, and a splash or two of salt free chicken broth. Once mixed in I added sliced mushrooms and peas. I didn't need to add any salt, but my husband did add cracked pepper to his serving. We also used egg noodles. For the amount of turkey we had, it only made 3 good size servings. I typically don't have sour cream around, so this is a meal I will have to prepare for.

Orzo with Parmesan and Basil

I made this dish two nights ago and currently have it on the stove for more. I made the dish for three girlfriends at a little party trying various nibbles. It was excellent and the perfect dish to prepare as guests are arrving. Simple to make and easy to walk away for a few minutes. The timer went off and it was perfect. This time I am using just a little less butter. It seemed a tad bit buttery for my taste, but that could have been from the cheese - which gave it great flavor! I am just taking a bite of the second batch. Still great. I think this could easily have a bit of meat, like chicken, turkey, or pork added to make a one dish meal...whch would appeal to my husband more.
