Aebleskiver!
About this Cook
I'm a senior in college, and finally moved out of the dorms last year, so I've got my very own kitchen to experiment in! I live with a bunch of crazy roommates who, along with my boyfriend, make very willing guinea pigs for any new and fun dishes.
My favorite things to cook
I love to make dessert, since I'm addicted to all things sweet. However, I'm trying to do a lot more healthy main dishes. Cooking meat (all sorts) still makes me a little nervous, so I'm always on the lookout for tasty and simple ways to cook up chicken, pork, or beef!
My favorite family cooking traditions
My grandfather was adopted by a wonderful Danish family as an infant, and so I was raised eating several traditional Danish recipes for various holidays. My favorite would have to be aebleskivers (I use the family recipe, but its similar to the AR version) which we eat every Jan. 1st.

Baked Ziti Casserole
We thought this was very tasty. I added spicy sausage to the sauce as well as some defrosted chopped spinach. I added fresh basil to the ricotta cheese mixture, and used an Italian 3 cheese mixture in place of parm cheese. I too used more sauce than the recipe calls for. Thanks for a great recipe!

Smothered Green Beans
We thought this was great. As other reviewers suggested, I first steamed the beans for about 5 minutes. I also used chicken broth instead of water, and threw in some red pepper flakes. These were delicious!!!

Byrdhouse Marinated Tomatoes and Mushrooms
This recipe was wonderful! I was worried, because I'm not crazy about mushrooms in general, but they were delicious in this recipe. I ate it both plain and also served finely chopped over cheesy homemade focaccia bread, which I loved as well. I actually ate it for a few days in a row and didn't notice the tomatoes getting very soggy as another reviewer did, but my tomatoes were fresh from the farmers market.
