Eve's Chicken Quarters

Reviewed: Jul. 4, 2008
I used 4 large leg/thigh quarters so I doubled the rice (my hubby loves rice), used 2 c water, LARGE (24oz I think) can of chicken broth, 16 oz sour cream, and cut way down on the garlic. I am Italian and love garlic but it is way too over powering in this dish. After making this twice I have cut down to 1 clove of garlic and that is it. Very easy and good. Thank you

10 stars, awesome. Instead of 28oz can tomatoes, I used 1 large ball jar of tomatoes my mother canned over the summer, put them in the blender, fresh basil, only 1/2 lb sausage and 1 lb hamburger, cooked meat, onion and garlic together: added rest of ingred. to crock pot and added meat mixture, low 5 hours awesome, thanks

Very good, all I changed was I diced raw chicken and sauteed it in a pan with evo and 1/2 way through added 2 cloves of garlic and half an onion (both chopped fine)and finished cooking the chicken. Added 1 jar sauce to chicken. Covered bottom of 9X13 with 1/2 the other jar and after assembled topped with rest of sauce. Cover with foil bake 50 min then remove foil and bek 10 more minutes. Yummy. Also sprinkled parm cheese and fresh ground black pepper on to each layer.

Take your time with this recipe and you will be happy. Only used 1 & 1/2 T of sugar and 1/4 c shortening and 1/2 c butter. In food proc pulse dry items, then add butter/short, pulse until crumbly, add liquid, pulse a second or two. Try not to touch a whole lot. Use a floured surface and gently roll out. I baked 350 10 minutes and 400 for 5 minutes

Very good but missing something, maybe a little more salt, will try that next time. I used 1/2 butter and 1/2 shortening, also increased sugar to 1 T. I only had to bake for 7 minutes, may have made them smaller, I used the top of a glass drinking glass to cut. Topped with melted butter. Also used buttermilk

Fettuccini Carbonara

Reviewed: May 8, 2008
Very Good, I changed a few things to make this restaurant quality: I only used 2 shallots, finely chopped, no onions, only 1/2 lb bacon and 4 boneless skinless chicken breast, 1 can peas, 1 cup heavy cream, 4 egg yolks, 1& 1/2 c shredded parm cheese and 3 cloves garlic. I grilled the chicken breast, slice them thin and set aside. I also cooked the bacon along with the shallots, then added garlic. I added the peas (drained) and the chicken at the end, topped with fresh cracked pepper. Very good and VERY easy
