Mexican Bean Burgers
Made with Mexican beans as I didn't have any canned kidney beans. Had a great texture. Served just as you would a hamburger & my 1 & 2 year olds ate most of it. Will be making again, experiementing other options. Has great potential.

Portobello Penne Pasta Casserole
Didn't care for this. If I could pass on one suggestion to anyone wanting to make this, it would be - try to cut back on the butter.

Spinach and Black Bean Pasta
We only had 8 oz of pasta, but that was enough. My husband spiced his up a bit & he really liked it, whereas I thought it was a bit bland (would recommend some additional spices). Very filling though!
