Rum or Bourbon Balls
I didn't give a full 5 star only because I changed a couple of things. I tried these twice. Attempt 1: followed recipe except: no walnuts, used Bourbon and Bourban soaked raisins, dissolved sugar into Bourbon. Results: They were way to strong. I could barely eat one. Attempt 2: used white chocolate, Malibu Rum, Rum soaked raisins and walnuts. Results: Soooo yummy. The amount of rum was perfect the texture was cookiedough-like and the flavor was absolutely wonderful. I got several compliments and many recipe requests.

White Chocolate Raspberry Cheesecake
I made this twice and each time my berries sank to the crust. I made a few changes; for the crust I used graham cracker and used strawberry jam instead of the rasberry mixture. I left the batter insself alone though. Maybe I'm mixing the batter too much. Oh well, both times the cheesecake was a big hit and despite it not being as pretty as the pictures, everyone loved it. Big tip I took was to leave in the oven for an hour to cool. Be sure not to open the oven at all even to peek or you risk the top falling inward.

Chicken Enchiladas V
This recipe made my first time making enchiladas a success! I only gave it four stars b/c I did not fix it exactly like the recipe. I seasoned my chicken with garlic powder while cooking and then shredded it by hand. I also used a half of packet of taco seasoning instead of chili powder and salsa instead of chili peppers. I used a mix of cheeses that I had on hand and added it to the mixture also. I thought the soup was too thick so I added some naco cheese and covered that with more shredded cheese. It was delish! My husband is begging for us to have it again tonight and my 3 year old even liked it! Thanks for the recipe and the ideas!
