Jalapeno Chicken Dip

Easy, tasty and travels well. I took to a pot-luck. The night before, I cooked everything as instructed, added 1 small can Ortega chopped roasted chili and about 3/4 cup of pre-shredded mexican cheese. Next day, tossed in a crock pot about 1/2 hrs before the party and it heated well. Served with tortilla chips, and put spicy salsa and guacamole in separate dishes on the side and let everyone know if they wanted to spice up, to just top with these. It was well received.

Sesame Pasta Chicken Salad

Made this on the fly and me and my family loved! I made few changes. Used Udon noodles because that is what I had on hand, didn't have cilantro or sesame seeds. Added water chestnuts and red bell pepper topped with crsipy noodles. The color was fine - looks like chow mein noodles. Used 1/3 cup oil as other suggested. This was served as a main dish. Would love to try with cilantro, would not use bow tie pasta after the success of the Udon noodles.

Slow Cooker Stuffing

Everyone was silent, pushing it around their plate until my son said he doesn't like it. I agreed and everyone burst out laughing at how this was. I just don't see how this can be adjusted to work. I told all that at least we will remember for years to come.

Salmon with Creamy Dill Sauce

I can't imagine the sauce without the horseradish. I doubled the dill and included chopped(seeded)cucumbers as suggested by another cook and they were a nice addition. Sauce is more like a glorified tarter sauce. If you put too much on, it will overpower the taste of the salmon. We eat salmon at least once a week and was looking for something different. This was very, very good, but not the best ever.

Chili Dog Casserole II

i was looking for a twist to serviing chili dogs, while reading all the reviews, I figured, why bother, just heat all up and assemble individually and serve. No advantage to putting in a casserole. It is really just a hot dog burritio.

Sparkling Punch

I simplified. I used a ratio of 2 cups of Newman's Lemondade in a carton (no high fructose corn syrup) for each bottle of sparking cidar. I made for an office wedding shower. It was fast, easy, attractive and well received.

Cherry Tomatoes Filled with Goat Cheese

Used Humboldt Fog - top shelf goat cheese and it was good. Please not that most people (like me) who cannot eat dairy, have no problem wtih goat-milk products. Let's face it all you foodies, a key to good cooking is good ingredients. Have also made using dill in place of basil and have also used cilantro.

Aloha Coleslaw

I have made as listed and also made adding some pickled ginger and then made another time adding poppy seeds. This is just an all around easy and good tasting recipe. I am going to try the cilantro and peanuts as suggested this time.

Apple Blue Cheese Salad

So good. In the interest of time, used bottle dressing and did not marinate the apples, just peeled, chopped, put in the bowl with other ingredients. Used baby spinach instead of lettuce because I had on hand. Didn't measure the salad dressing, just added and tossed as normal. The bowl was wiped clean!

Grilled Flank Steak Salad

Marinate your steak in what you normally would use. Omit the radish (love them, but don't work with the steak). Add grilled green beans or asparagus, blue cheese crumbles, red onion and mushrooms. You will get a hearty salad, with lots of textures and flavors.

Oreo™ Cookie Bark

I just made a batch and it is good, not out of this world. I cut the Oreos on a cutting board and shook off the excess crumbs. I felt that the proportions were off and didn't use all the chopped cookies. The consistancy was good when done. I will be taking along with my lemon bark to an annual picnic we attend.

Grilled Salmon

This was good, but I don't understand why everyone is raving so much. It tastes like salmon with lemon and rosemary. The flavors go well, but it isn't the best salmon (and I used fresh, wild salmon)recipe I have ever used.

Portobello Mushroom Pasta

OMG! This is so good. We have been trying to eat vegetarian a few evening a weeks in an effort to be healthier. So far most of the dishes have either failed or been so-so. This is a keeper. The only changes I made was to use balsamic vinegar (no wine vinegar in the pantry), add carmalized onions, roasted garlic and summer squash because I had all on hand. Took others advice and added extra garlic and herbs. Can't wait to make again.

Coconut Macaroons III

These just didn't taste good. I followed directions, chilled the dough. The baked up perfectly, nice shape, nice color, nice texture, but didn't taste good. I took to a party where people jumped on them, but not one person said, yummy, great or anything. I noticed a lot of half eaten cookies on everyone's plate. I did some in chocolate, and my husband thought that helped. I guess 5 stars for presentation, 2 stars for flavor - and I did use 1tsp of the almond and 1 tsp of vanilla.

Tuna Noodle Casserole from Scratch

Finally a tuna casserole that doesn't take like cream of any kind of soup. I made as is, and wasn't too bland for the kids. For a more adult flavor, you can spice it up. Even bland it tasted better than the ususal processed soup and processed fried onion topped version.

Sour Cream Coffee Cake III

Made this for an addition to a Sunday brunch and it was better than expected. Everyone loved. I made as is. I am not sure what people are looking for in a coffee cake, but this recipe delivered as a classic sour cream version.

Baked Flounder

Easy and delicious! I cooked with 2 T each white wine & broth and 1 T lemon juice. Put fish in prepared dish, poured wine mixture over and sprinkled with Italian seasoning. Topped with the cheese and crumbs, then as an afterthought pulled out the parmasean cheese and sprinkled lightly across the top. drizlled with butter as directed. Cooked for 10 minutes and then put in broiler to toast top. Used fresh sole and family loved it.
