I am a happily married wife of 20 1/2 years and mother of one 19 1/2 year old son. I enjoy almost everything out of doors and am currently studying to be a radiology technician.
My favorite things to cook
Mexican dishes, Italian dishes and Scratch Cakes.
My favorite family cooking traditions
We didn't really have any, so I'm trying to start my own
My cooking triumphs
Mama's Chicken Enchiladas, Mama's Tostadas, Scratch Silver Cake, and putting together a meal out of the cupboard at the last min!
My cooking tragedies
Believe it or not............Meatloaf. It's OK, but my husbnand way outdoes me on this one!

Caribbean-Spiced Pork Side Ribs
I made these for our traditionally untradtional thanksgiving this year and good rave reviews. I made three racks for 7 people and only had enough left over for two plates to send home. The flavor was fantastic, they weren't dry, the lime flavor snuck in but didn't overwhelm, the ginger stood out and the rest blended very nicely. Everyone was pleasently full. The meal was ended with jamaican plantain tarts, also from this site and ......... My best friend made the carribean holiday shrimp and the hard do bread for our appetizer and bread while my adopted little sister made the jamaican rice (also from this site) as a side dish as well. The meal was fantastic and every bit of it was from this site! THANKS AGAIN ALLRECIPES.COM!

Pizza Dough III
After reading the reviews I started w/2 1/2 cups of flour and did have to add a bit more to make workable dough after rising 1 hour. Pre-baked 5 mins in 400 degree oven. Topped w/sauce, mozzerella, pepperoni, italian sausage, onions, mushrooms, and black olives. I made 3 batches and made 1 thin crust on a large cookie sheet, 1 "hand tossed" type of crust on a small cookie sheet, and 1 batch of breadsticks. Pizza was really good (even though I forgot to add garlic powder and italian seasoning into the dough) but the bread sticks were only so-so. After we finished the breadsticks I realized I should have let them rise again after shaping, so no fault of the recipe at all !LOL! I do suggest starting w/the extra flour and adding seasonings before cooking. I wouldn't call the crust "dull", but it would have been even better had I remembered to add the seasonings.

Sweet Dinner Rolls
This is the roll recipe I've been looking for :) These got GREAT reviews from family and friends. I was asked why i didn't make a double batch and my brother-in-law asked me to make them again for his b-day dinner. I made 12 clover leaf rolls from deviding the dough into 36 balls and placing 3 balls in each cup of my muffin tin. Next time I'm trying the 9x13 pan and 18 balls. GREAT recipe....Thanks :)
