Apple Butter Pork Loin
I think this is my favorite "roast" involving fruit. Just make sure you've got a thermometer -pork is done at 160. This came out so tender I could cut it with a fork. The flavor was really good, too!

Creamy Chicken and Wild Rice Soup
This soup came out amazing. I chopped up some carrots, celery, onion and garlic and sauted it in a tiny bit of butter in the pot before adding everything. I used 6c water and 4 chicken boullion cubes, as I was lacking stock/broth, used a box of Rice-a-Roni's Wild Rice and it worked just fine. Next time I may use less flour, or more milk, just to thin it a bit. Fantastic. :)
