Emerald Green Risotto

Loved it!!! Be careful - don't add the veggies too soon - they will lose their emerald color and soggy and unappetizing.

In my hands the best recipe for baking powder biscuits is this one: 2 c. flour, 2 t. baking powder, 1 t. baking soda, 1/2 t. salt, 5 T. butter, 2/3 to 3/4 c. milk. I do everything else the same. It is similar to JP's biscuits, but doesn't have sugar.

Fabulous!! I used 1/2 lb elbow pasta and am glad I did that because 1 lb would be too much. I also cut off a piece parmesan rind and boiled it with the soup. I did not boil the grated cheese with the soup, but rather added it last after turning off the burner.

Sweet Potato Carrot Crisp

Based on what I had on hand I used 6 sweet potatoes, 1 lb baby carrots 5 garlic cloves, and skipped the honey. Then I doubled the amount of topping to 1.5 cups breadcrumbs, 1/2 cup pecans, 3 T. butter, and 4 T. parsley. Also I steamed the carrots and sweet potato rather than frying.

Zucchini Brownies

Was a very odd recipe. Not very sweet and a little rubbery. I went without frosting - but it is probably better with frosting. Also, I chopped the zucchini in my food processor and could still see tiny green particles in there in the brownies. Not all that appetizing.

Sesame Seed Veggie Salad

When I opened the can of black eyed peas I immediately found the scent of them quite strong and not that pleasant. I went ahead and put them in the salad anyway, as the recipe says, and let it marinate overnight. After marinating it tasted alright, but I could still detect a trace of the black eyed peas flavor and smell which put me off. Since there are so many other good salad recipes on allrcipes I will not be making this again.

Good but not amazing. You could sort of taste the flour. This recipe would be useful in preparing tofu for the tofu parmigiana recipe which is also on this site.

Doctor Bird Cake

After all the great reviews I expected a great cake. Unfortunately mine came out really dry and boring. All you could taste were bananas even though I put in powdered ginger and allspice too. I even tried to doll it up with frosting (cream cheese frosting) and still didn't like it that much.

Tofu Salad

I made two changes, one good one bad. I used Chinese sweet and sour sauce instead of the "sweet chili sauce" because I didn't know what that was. I liked that change. I also used canned peas rather than fresh and that was my mistake. They were a dull color and they were mushy. Next time I will use fresh, uncooked peas with this recipe.

Brown Sugar Meatloaf

Well just like everybody else, I made some changes. I'm certain they enhanced this recipe! I made sure to pre-soak the milk and saltine crackers. I chopped the onion very fine, beat the eggs, and mixed everything together rather than making the layers. Most importantly, I substituted an acidic, vinegar-containing bbq sauce (Prosser's brand) for ketchup. It tasted spectacular! Also I would recommend using nonfat milk and very lean beef, otherwise this is one fatty meal!

Mango Cardamom Bread Pudding

WOW! This was so different than the average dessert and with the cardamom it had a very unique flavor. I upped the sugar to 1/2 cup and used a deep casserole dish but otherwise followed the recipe. Next time I will use just 1 t. cardamom since, as others mentioned, it is a strong presence.
