Laurie's Shepherd's Pie
I love this for those quick fix one dish meals. Although I do serve with a salad occasionally. I alter the vegetables to whatever is in my kitchen at the time. Pinto beans, grean beans corn white beans carrots etc. Its always a great hit and very filling.

Flatlander Chili
This is a GREAT chili. I recently made it for my father-in-law and won him over. Believe me this is no easy accomplishment. I season to taste frequently adding more cayenne pepper and cumin and less chili powder. For a different variation and real tomato taste I add a large can of diced tomatoes.I simmered for a few hours until my guests arrived and it was the perfect consistency.

Praline Cake
I made this cake also cutting 10 minutes off the baking time. I substituted 1/3 c Peach Schnapps for some of the water called for in the cake directions. It was wonderful. Just a hint of peach with the caramel flavor of the frosting did the trick. Awesome recipe and very easy.
