Oatmeal Chocolate Chip Cookies II
My daughter is allergic to dairy and egg. So I substituted dairy free margarine for the butter, and used applesauce for the egg. I cut the recipe in thirds, which called for 1 2/3 cup oats. I used only 1 cup, and I think the consistency was perfect! They did take longer to bake, but it may have been b/c I did them on a stone. I may turn them up to 350 next time. But I thought these were perfectly delicious, and a healthier option for chocolate chip cookies.

Becky's Chicken Salad
Delicious! I used this for a Pampered Chef party, my consultant was more than willing to try it. Everyone LOVED it! I did use pecans instead of almonds because I don't like almonds. The only other thing we did differently was we didn't add the parsley so that people could try different PC seasonings with it instead. I, personally, would use the PC Dill Mix with it instead of parsley. We served in on wraps with lettuce and tomato.

Chocolate and Fruit Trifle
I did make some alterations, but it still came out really great! I didn't use raspberries because they're just too expensive. I used a brownie mix because I already had one in the cabinet. I just followed the instructions for cake-like brownies. I used white chocolate pudding because that's what I had and I thought it sounded delicious with the brownies and fruit...and it was! I used a whole 16 oz carton of heavy whipping cream and had plenty of cream mixture...unless you want to add some to the top, then I didn't have enough. I also cut the orange juice because we don't drink it, and I didn't want to buy some just for this. Overall, it was delicious, and I still had people ask for the recipe. I think the white chocolate over the french vanilla was a good choice!
