Feta Cheese Turkey Burgers

Reviewed: Jul. 29, 2009
These are awesome, made with these revisions...I use ground chicken, not ground turkey, they're even better with ground chicken. Also, I use feta with mediterranean herbs, so the olives aren't even necessary. Definitely cook them in a skillet, though, they stay together better! :D

Chicken and Broccoli Alfredo

Reviewed: Jun. 1, 2009
I doubled the recipe and pretty much made it as is, except for a few alterations. I added some Mrs. Dash seasoning and garlic salt to the cubed chicken, as well as some fresh sliced mushrooms. It was really good, my whole family loved it. Will definitely make it again.

BREAKSTONE'S Chicken and Sour Cream Enchiladas

Reviewed: May 29, 2009
These were fabulous, I added a bit more spice to the mixture, including some no salt Southwestern Mrs. Dash, which brightened the flavor a lot. The whole family loved these. :)

Kelsey's Favorite Stuffed Green Peppers

Reviewed: May 29, 2009
I thought these were pretty good, though they were definitely lacking in spice just a bit. I didn't bother boiling my peppers, as we like them somewhat firm anyway, and I added garlic salt, cumin, basil and cayenne to the hamburger and onions as I sauteed. They were pretty good, and my family enjoyed them.

Monkey Bread I

Reviewed: May 29, 2009
This monkey bread was excellent, though I do have one thing to point out. I have NEVER seen a 12 oz tube of refrigerated biscuits in any of the stores here in my area. they are either 16.3 oz or 7 oz. So I just used two and a half tubes of the 16.3 oz Grands Buttermilk biscuits. Even that was a little too much, but I'll know for next time. Definitely use a bundt pan, though...I even had a little spillage, but using a tube pan would be disastrous. Great recipe! :)

Slow Cooker Pulled Pork

Reviewed: May 29, 2009
This was pretty good, though I would recommend using a different cut of meat, perhaps a smoked shoulder. I used two tenderloins, and they almost got cooked too much, in my opinion. The flavor was ok, though too sweet for my taste. If I make it again, I'd add some tabasco or something, to cut the sweetness a bit. My family liked it, though.

Fried Chicken with Creamy Gravy

Reviewed: Apr. 16, 2009
I made this the other night, without the gravy, and it was fabulous! The only change I made was I added a little cajun seasoning, to kick up the flavor a bit, and marinaded it for a few hours in lowfat buttermilk. I think the key also is to use a cast iron skillet. I had one batch in that, and the other batch in a regular non-stick skillet. The cast iron batch was just awesome, crispy and fabulous, so I'd use only that in the future. Thanks for a great recipe!

Country Fried Steak and Milk Gravy

Reviewed: Mar. 24, 2009
I made this for my family tonight, and the only change I made was I fried them in canola oil, since I refuse to cook with lard. It didn't really do anything for me, the flavor was lacking, and the gravy was bland, but my husband liked it, so that was good, atleast.

BUSH'S® Red, White and Bean Minestrone

Reviewed: Mar. 15, 2009
I made this the other night, and it was fabulous. The only change I made was I used sweet Italian sausage and left out the spinach. I also added ditalini pasta instead of the bowties, which is more traditional for minestrone. Awesome recipe, loved it!

Italian Sausage Soup with Tortellini

I made this tonight, and it was really good on a freezing night. The only changes I made were omitting the wine, and using canned diced tomatoes. It was a wonderfully flavorful soup, and we all loved it.

Super-Delicious Zuppa Toscana

I thought this was just okay...I guess I'm just not a huge fan of Zuppa Toscana, but my family did enjoy it, so that's what matters the most to me. :)

Spinach Lentil Soup

Reviewed: Jan. 11, 2009
I cannot say enough about how awesome this soup is. I had never made lentil soup before, so I was sort of hesitant. I ended up not having enough salsa, so that also worried me. So the only changes I made was I added some fresh mushrooms and a jar of marinara sauce, and that made it absolutely perfect! This soup gets better the longer it sits in the fridge, the second, third, fourth day. We all loved it, and I'm making it again this week!

Incredibly Easy Chicken and Noodles

Reviewed: Dec. 23, 2008
I made this last night for my family, and we all loved it. I couldn't find the frozen egg noodles at any of the stores around me, so I just used dried. It was still yummy, so comforting and easy. Thanks for a great easy recipe!

Wake-Up Casserole

Reviewed: Nov. 18, 2008
I made this tonight as written, except I only added 2 cups of cheese, and it was marvelous! I put half the cheese on top of the ham and hashbrowns, and the other half on the very top, on top of the eggs. We all loved it, thanks for an awesome recipe!

Chicken Puffs

Reviewed: Oct. 29, 2008
These were really good, though admittedly, I tweaked them slightly. I baked the chicken ahead of time with some fresh mushrooms, then chopped into small pieces. I added the cream cheese, maybe 2 tablespoons of Smart Balance, the garlic, some chopped pimentos, a little pepper and seasoned salt. I also baked them at 375 for about 25 minutes, and they were PERFECT!! We all loved them, thanks for a great recipe!

Spinach Quiche

Reviewed: Oct. 21, 2008
This quiche was marvelous, though I took some others' advice, the ingredients really do make enough for two 9 inch pie crusts, as long as you add an extra egg or two. We all loved it, it was awesome!

Shrimp Scampi Bake

I'm not sure why, but I really didn't like this very much...it was kind of bland and greasy. My husband and daughter, however, loved it. I was looking for something a little lighter and more flavorful.

Delicious Ham and Potato Soup

This soup is wonderful, and incredibly easy. The only chage I made was I added some frozen corn, and omitted the salt. It's really a great base soup, there are so many variations! Thanks for a wonderful recipe!

Antipasto Squares

Reviewed: Sep. 18, 2008
These were fantastic!! I didn't have the roasted red peppers, so I sauteed a red bell pepper in some olive oil and added that. I left out the pepperoni, too. I took the advice of others and baked it at 375...it turned out perfectly! :)
