Smashed Cauliflower
Mmm... I have to say I did alter the recipe, but found it delicious! I cooked the cauliflower as directed, but then drained it completely. I then whipped it with a hand mixer with the butter and cheeses and added in a little half and half to get the right consistency. Definitely not low-fat, but delicious. Will be making this again!
