I am the Head Chef/Kitchen Manager for a very busy breakfast/lunch cafe in Tampa, Fl. I am a single dad, of one precious 11 year old girl, and love my current work hours. They allow for me to enjoy my daughter and be a good dad. I am the quintessential red neck I own big mud trucks, four wheelers, and could never live in a deed restricted community. I enjoy hunting but not fishing. Most importantly I have not found anything that I cannot cook very well!

Best Beef and Broccoli
This is a very tasty recipe. We will be making it again and again. We did add a clove of garlic, and lightly sauteed it with the onions.

Cuban Pork Roast I
Very traditional Cuban pork. I reduce the sherry and add 1/4 c white vinegar. I also slice a large onion and add that to the marinade. Works well roasted in the oven or in a crock pot.
