Mexican Pizza I
This was really good!! I used tostada shells because I didn't have tortillas but the effect was the same and I didn't have to fry them. I put beef, beans, taco sauce and cheese on the shell, topped with a second shell, more taco sauce and cheese, then broiled them until the cheese was melted. I sprinkled with diced tomatos and sour cream. Next time I'm gonna put on chilis and green onions (I didn't have them this time). All in all, a great change from nachos or tacos and it didn't take any more time. Definitely a keeper!!

Corned Beef and Cabbage
My husband and I don't care for cabbage, and he's never had corned beef before so he was leary. I couldn't fit everything in, so I think that half the carrots and potatos made it in. I also crammed in as much cabbage that would fit. This needs to be either a smaller piece of meat and less ingredients or a much larger crock pot. I used a 5 1/2 qt. one. This wasn't the best corned beef I've eaten, but for convience it was good. I might make this for next St. Patty's Day, but I won't make it for an every day meal.

Tender 'n' Tangy Ribs
This is good. I will probably use this recipe again when we have ribs. I put all the ingredients in a pasta pot on the stove and boiled on med. until done. Then I basted with BBQ sauce and broiled for 10 minutes. The ribs were also good cold the next day on a bun.
