About this Cook
I am a young mother of young children (under age 5). They don't always eat what I cook because an adult can only have so much macaroni and cheese, no matter how dressed up. My kids do eat most of the things I make because I try to make things I know they'd like.
My favorite things to cook
Italian food, especially with tomato based sauces. I'm also quite good at asian stir-fry.

Thanksgiving...need I say more?
My cooking triumphs
My husband's parents came over for dinner a few weeks ago. I had one hour to prep, make and serve. I found a recipe for chicken parmesan that sounded appetizing and made it. I have never seen my Mother-in-law eat so much! We all loved it (except my kids, they wouldn't try "red chicken").
My cooking tragedies
Eggplant pizza was a disaster. I was overdue for the birth of my first child and heard that eggplant can cause labor. So I found a recipe, made it, and threw it in the trash shortly after it was done. Thank you Domino's!

Ramen Noodle Frittata
It was good for an easy meal, but not "let's make more!" material. It was too dry and the seasoning packets added too much salt. I could have let it cook a little bit too long ergo the dryness factor. I added peas, milk, and some mozzerella cheese in the egg mixture then cooked it as directed. I might make it again, but not for a long while.

Jill's Sloppy Joes
Good recipe, though I like mine better (my recipe makes way too much for one family dinner and I can't really lessen it easily). For a different texture try using shredded beef instead. I had some Venison roast left-over from Sunday dinner, shredded it and used that instead of ground meat. It saved on cook time too as I didn't have to thaw, then brown any burger.

Heavenly Halibut
I am an avid fish-hater, my hubby a fish-lover. I tried this because Halibut is easier on my stomach than most other fish. Most fish makes me sick but this recipe was wonderful! I ate an entire steak! I didn't have green onions so I used chives. I have and will make this recipe over and over again.
