French Onion Soup Gratinee

Reviewed: Jan. 17, 2012
Excellent. Easy to do with a mandolin slicer for the onions. Love the bubbling cheese and crouton. When putting leftovers into containers, I didn't keep all of the onion in the soup... A LOT of onion slices are leftover in the bottom of the pot. Instead, I froze them for future use in a crock pot roast. Thanks for sharing - I will make this again!

Prosciutto-Wrapped Chicken Breasts with Herbed Goat Cheese

Reviewed: Oct. 26, 2011
These were very good and the boyfriend complimented them more than once, which isn't something he tends to do. Of note - the smallest of my chicken breasts was overcooked by the end of cooking time. Served with roasted red potatoes and steamed broccoli.

Awesome Slow Cooker Pot Roast

Reviewed: Aug. 28, 2011
I don't think a pot roast could turn out better. This is the first time I've added any canned soups, as in the past I'd just used the dry onion soup mix. I substituted cream of celery, but otherwise followed the recipe exactly. Will make again. Thank you!

Homemade Flour Tortillas

Reviewed: Aug. 13, 2010
These tortillas are pretty good. I made the full 2 dozen, so they were on the small side, but I like that because it's instant portion control. Like other reviewers, I also like the fact that there are only 2T of lard vs other recipes with more fat. The tortillas became even more pliable after cooling stacked in layers within a Ziplock. The only reason I gave 4 stars rather than 5 is that the cooking time was not specified (I know this is an art, not a science), so that my first few tortillas were not awesome. I substituted 1.25 cups of white flour for wheat, and used a tortilla press (saves lots of time vs rolling pin). Thanks for sharing!

Slow Cooker Blackberry Pork Tenderloin

Reviewed: Jul. 27, 2010
This is a great, simple recipe. I do hate reviewing recipes when I didn't follow it exactly, but I learned in the middle of preparing of this one that my blackberry jam didn't look fresh anymore, so I tossed it. That said, I substituted a jar of prune-plum jam, and didn't use my fresh blackberries for extra sauce since the jam mixture made quite a bit in the slow cooker. Slow cooker bags made clean up incredibly easy (can't imagine trying to scrub cooked jam off of the stoneware!). Thanks for the recipe - I will definitely make this again.

Sour Cream Blueberry Muffins

Reviewed: Jul. 17, 2010
These muffins are very good! I am not the type to ever reach for a blueberry muffin (or anything made from Bisquick for that matter) if there are other breakfast items around, but I did like these quite a bit. I prepared them exactly as the recipe states with 1.5 cups fresh from the farm blueberries dredged in flour. The muffins were perfect - moist and not too sweet. I also agree with the other reviewer that you can't even tell it's Bisquick! The sour cream makes all the difference. Thanks for the quick and easy recipe!

Broccoli Chicken Roli

Reviewed: Feb. 7, 2010
I made this as tiny bites in a mini-muffin pan by cutting each crescent roll in half to make two triangles, draping those over the muffin wells. I over-filled the crust and then folded the triangle's edges over the top. Used all of the filling, making 32 mini-bites. Good tasting but a little too much mayo flavor for me. Will make again, but perhaps use 1/2 mayo, 1/2 cream cheese.

Root Beer Float Cake II

Reviewed: Feb. 7, 2010
I doubled the recipe for 44 cupcakes and added 3 tsp root beer concentrate, but would have added more if I did it again. I could not find the extract ANYWHERE near me (Kroger, Whole Foods, Target, Hobby Lobby), but found the concentrate at a Super WalMart. This has a very bland root beer flavor, a strong root beer scent. I added root beer concentrate to a buttercream frosting and that made the flavor better. Great idea, but I won't be making this again.

Quick and Almost-Professional Buttercream Icing

Reviewed: Feb. 7, 2010
This icing did what I wanted it to: stand up for decorating cupcakes. I am not a huge icing fan in general, and didn't necessarily like this more or less than the store bought kind - it was just different in flavor using butter rather than the shortening used in the canned stuff. I gave it 4 stars because it's buttercream, it was easy to make (and adjust flavoring as needed by substituting the vanilla), and it made enough to crumb coat 44 cupcakes. It has a STRONG butter flavor, which I supppose is the nature of the beast, but be warned. Thanks for the recipe.

Lemon Blueberry Drop Scones

Reviewed: Jul. 30, 2009
These were easy to make, delicious, and turned out beautifully dotted with fresh blueberries. These, however, are not scones... they are more like muffin tops, and slightly chewy. But I loved them and will be making them again. The lemon zest icing is amazing.

Sangria! Sangria!

Reviewed: Jun. 11, 2009
I second the person's opinion that this is a very forgiving recipe. I used a red zinfandel wine that I had on hand, with everything as directed except triple sec because I didn't have any. Went over well for a tapas party and complimented my theme perfectly.

Garlic-Lemon Double Stuffed Chicken

Reviewed: Jun. 10, 2009
I followed this recipe as written, but reduced to 2 servings and probably used less cheese than called for. I find it easier to hold "stuffing" in chicken when the breast is pounded and then rolled, so that's what I did, but it shouldn't matter in the end. This chicken was delicious! I served it with simple sauteed summer squash for a fantastic 30 minute meal. Thank you!

Make Ahead Lunch Wraps

Reviewed: Feb. 10, 2008
These are ok. I used brown rice cooked with garlic and added a bag of frozen pepper/onion blend to the mixture. I have a ton of them, so I'll definitely be eating them for a while. I'll update if they get better upon my second one.

Grain and Nut Whole Wheat Pancakes

Reviewed: Feb. 10, 2008
These pancakes were wonderful! Per other reviewers, I added an extra egg, more walnuts, about 1 tsp each of vanilla and cinnamon, and a scant 1/2 C of flaxseed meal. I served these with grapefruit and orange segments. SO YUMMY!

Zucchini Brownies

Reviewed: Feb. 10, 2008
These were fabulous. I made them just as the recipe called for with the addition of 1/4 cup chocolate chips. I was worried with the batter at first because it was so dry and crumbly (not like any other brownie batter I've seen...) but the zucchini slowly moistened the batter and they baked up just right. The brownies were not too sweet, so the frosting was a perfect compliment. Great recipe - I will definitely make these again.

Orange Braised Bourbon Chicken

Reviewed: Jan. 27, 2008
I'm not sure what I made here, but it was not very good. I do like similarly-named restaurant recipes, but this chicken's bourbon smell was overwhelming and the finished sauce was pungent yet tasteless.
