Pot Roast with Spaghetti

This is a nice change from spaghetti and meatballs and a great way to do something a little different with a roast. I liked the flavor of the sauce, but next time I will reduce the cinnamon since it was a little strong. Otherwise, this is a keeper!

Amazing Butternut Squash

Loved this. It isn't easy to find a butternut squash recipe that is savory. This one is really nice. The onion and parmesan cheese give it a great rich flavor, and best of all, it doesn't taste like dessert!

Pork Tenderloin with Steamed Kale

I have never cooked a pork tenderloin in foil before, but I am so glad I tried it. The pork was very tender and flavorful. I followed the suggestion of another reviewer and made a couple of changes. I browned the pork before putting it in the foil, and added some minced garlic to the dressing. I didn't have brown rice so served the kale and pork on a bed of white rice. The lime dressing was great on the kale and rice. Yum.

Thai Chicken Cabbage Soup

Collard-Kielbasa Soup

I was looking for a way to use up fresh collard greens and didn't have very high expectations. But this was a big hit at my house. I used dried beans so I added them with the kolbassi. I had canned diced potatoes so used them instead of fresh. Like other reviewers, this got really thick especially the second day for leftovers, so have a can of chicken broth on hand to thin it down. That worked great for us. As with most soups, this was even better the second day. There was plenty for two dinners.

Nana's Acorn Squash

What a great quick way to use acorn squash. Microwaving the squash made this a breeze, and once moosh up the glorious buttery sugary goop into the flesh of the squash, oh my my! Big hit at my house :)

Creamy Pasta Primavera

Tasty and very easy. I had a ham steak and several peppers to use up and found this recipe that used both. I didn't have mushrooms but did have an oriental eggplant which worked nicely. This is kind of a kitchen sink recipe - I think it would work with most veggies you might have on hand. I had to add extra milk since it really thickened up fast. I would make this again.

Eggplant Parmesan II

Really nice flavor and very easy. The only downside was that there wasn't enough sauce. It cooked down so much in the oven that I will need to open a new jar of sauce tomorrow night for the leftover eggplant. But the flavor was soooo good. I will definitely make this again, but will increase the sauce by 50%.

Onion Meat Loaf

I love the flavor of this meat loaf. My mom always added the onion soup mix, so this was similar to the meatloaf I grew up with. I really liked the consistency a lot. Unlike so many meatloaf recipes, this one really holds its shape and slices very nicely. Also we're not big fans of goopy sauce on top of our meatloaf and this one is nice and bare. We had it last night and again today for lunch in sandwiches. This is now the only meatloaf I'll make. It's that good :)

Zucchini Soup III

I have been making a version of this recipe since I was a newlywed (when dinasours roamed the earth :), and couldn't lay my hands on my recipe because my cookbooks are packed away while we do some remodelling. I have a bounty of zucchini and was so glad to find the recipe here. The soup is simmering on the stove right now and the whole house smells fantastic. We will eat this in big bowls with crusty bread and a salad. Not fancy, but comfort food at its best.

Cottage Cheese Spinach Chicken

Wow! These chicken breasts were awesome! I followed the recipe exactly, and my husband and I both loved it. The cajun seasoning added just the right amount of kick, perfect with the creamy spinach stuffing. This would be a great company dish for spinach-loving friends :)

Pork Chop and Potato Casserole

I made the recipe exactly as listed and it was just OK. I was surprised that the potatoes ended up mushy (almost like mashed potatoes) but the soup got mostly absorbed so there wasn't the creamy sauce I expected. If I make it again, I will add some water and shorten the cooking time.

Linguini with Broccoli and Red Peppers

I used only 8 ounces of pasta, as another reviewer suggested, but it still turned out dry. I added crushed red peppers to zip up the flavor a little bit, but it really needed more moisture. If I make this again, I will add some liquid or more olive oil.

This is easy and so tasty. Kind of a pork lo mein filled with great veggies. I was pleasantly surprised with how nicely the soy sauce coated everything. My husband and I both loved it, and I will definitely make this again.

Easy Garlic-Lemon Scallops

There is nothing that smells as good as scallops sauteeing in a pan. These tasted as good as they smelled. I followed some of the recommendations by others and added some white wine, flat leaf parsley and the juice of two lemons. I served it over fettucine and cooked some broccoli into the pasta water. So this ended up a one-dish meal of scallops, pasta and broccoli. My husband's comment was "this is great!" I will definitely make this again.

Best London Broil Ever!

My husband and I liked this but didn't love it. The sauce was really good (I served the meat over noodles), but the meat was not very tender. I roasted it tightly covered for three hours, so I'm not sure what I should have done differently. I will probably make it again if I can figure out how to get the meat more tender. I think I will use a different cut rather than london broil.
