Pork Tenderloin with Steamed Kale
I have never cooked a pork tenderloin in foil before, but I am so glad I tried it. The pork was very tender and flavorful. I followed the suggestion of another reviewer and made a couple of changes. I browned the pork before putting it in the foil, and added some minced garlic to the dressing. I didn't have brown rice so served the kale and pork on a bed of white rice. The lime dressing was great on the kale and rice. Yum.

Thai Chicken Cabbage Soup
Good easy soup. I didn't have the Thai chili sauce, and I think it would have been even better if it had a little heat.

Collard-Kielbasa Soup
I was looking for a way to use up fresh collard greens and didn't have very high expectations. But this was a big hit at my house. I used dried beans so I added them with the kolbassi. I had canned diced potatoes so used them instead of fresh. Like other reviewers, this got really thick especially the second day for leftovers, so have a can of chicken broth on hand to thin it down. That worked great for us. As with most soups, this was even better the second day. There was plenty for two dinners.
