i'm veggie, so everything i make prescribes to ovo-lacto-vegetarian standards. :) i love cooking with faux meat, some of my favorite brands are quorn, boca, yves, amy's, and etc. i like to grow fresh herbs in the kitchen so they're always nearby. whenever i'm stressed i bake! but i try to counter all that stressing (and cookies), with lots of time in the sunshine. i walk pretty much everywhere i go (or bike), and i enjoy strength training as well.

Salsa Chicken Rice Casserole
this was delicious! here's what i changed: i made it vegetarian and used 4 quorn brand chick'n cutlets. i added no water, and i sauteed the onion with some garlic before adding it to the mixture (i don't care for raw onions). i nixed the chicken soup and cream of mushroom in favor of medium spicy salsa and sour cream, and i was very liberal with the cheese, hehe. put everything together in a big glass dish and popped it in the oven. this recipe takes about 20 minutes (prep time + cook time) when you use faux chick'n.

Chocolate/Peanut Butter Drop Cookies
this recipe was okay. i was expecting something richer. i took some tips from other reviewers, added half teaspon baking powder and used 3/4 cup semi-sweet chocolate chips (instead of squares) and about 1/2 cup of all natural PB, and used an additional egg. i mixed all the batter together, too. they're not bad, but i think i'll try some other choco/PB cookie recipes.

Poppy Seed Chicken
great recipe! i've had this before, but i make it a vegetarian version. :) i just use cream of mushroom instead of chicken and i use quorn faux chicken fillets. so delicious!
