About this Cook
I am a single mother of a 9 year old boy and I work full time. I spend alot of time eating on the go, so i like to put my crock pot to good use...nothing like coming home and having dinner ready to go.
My favorite things to cook
I love kid friendly foods and any dish that requires alot of time (whenever I have time). Cooking is therapy for me. I especially love to make italian dishes.
My favorite family cooking traditions
Italian food and homestyle food (chicken fried steak, fried chicken, pot roast, etc.)
My cooking triumphs
I can cook almost anything. I love to cook for my friends and family. The one thing I made that most impressed myself was a cheesecake that took an entire 7-8 hours before I could dig into it. This is a huge deal for me....see below!
My cooking tragedies
I cannot bake! You will not smell cakes or cookies being made at my home anytime of year, even the pre-made cookies that you just stick on a pan and pop in the oven, I somehow mess up!

Ten Minute Enchilada Sauce
I had no idea it was so easy to make! I used regular flour as suggested by other reviews. I didnt have onion salt, so i just added a little diced onion. Also, didnt have a can of tomato sauce on hand so I substituted 8oz V8 juice. This was quick and easy and great for my beef enchiladas!

Salmon Patties I
I wanted a basic and easy recipe for salmon patties and I found it. I used the salmon in the pouch, it makes it alot easier than the stuff in the can. This is a great recipe for anybody to personalize.

Chicken Lo Mein
This was great. I took this to 'food day' at work, and it was a big hit. I used all the fresh veggies and marinated the chicken before hand. This is a keeper.
