Tomato Chicken Parmesan

Delicious! I prepared 3 chicken breasts with the following changes: First I patted the chicken dry and dredged in a flour/pepper mixture, shook off excess flour, dipped in 1 egg, then in parmesan cheese mixture (1/2 cup parmesan cheese, 1/2 cup Italian bread crumbs, dash of onion powder and garlic powder). I skipped the frying step and baked instead at 400 degrees for about 25 minutes adding the sauce and mozzarella cheese slice during the last few minutes of cooking. I also used homemade sauce from the World’s Best Lasagna recipe which beats jar sauce any day. The result was wonderful chicken that was moist on the inside with a crunchy coating on the outside!

Pierogi (Polish Dumplings)

These were very time consuming to prepare, but worth it in the end! I used pre-made Bob Evans refrigerated potatoes and added some cheddar cheese and finely diced sauted onion. These are great just boiled ("healthy" version), and even better fried in a little butter and onion. I served with sour cream and salsa on the side.

Easy Slow Cooker French Dip

I used a 3 pund rump roast and added sauted fresh mushrooms. Served on toasted baguettes with mozzerala cheese. This made 6-8 good size sandwiches!

Shrimp Scampi Bake

YUM!!! I used medium sized frozen shirmp, thawed. Next time I will definitely cut the butter in half. 10 minutes of cook time is plenty for this size shrimp. This was the best shrimp scampi I have ever had!

Creamy Cheese Bread

Love this recipe! Just be careful not to load with too much of the cheese mixture, the italian dressing can be a bit overpowering. A thin layer of the mixture is all it takes. This is great as an appetizer or as a side dish.

Mouth-Watering Stuffed Mushrooms

I stuffed 24 mushrooms and still had filling left over! 1/4 tsp. of cayenne was a little too much kick for me, next time I will use a little less. I also added about 6 minced shrimp to the filling. Wonderful appetizer!

Garlic-Lemon Double Stuffed Chicken

Very good chicken recipe!! I halved the recipe using 3 large chicken breasts and butterflied as the recipe directed (rather than pounding as others suggested) and it worked fine. I used 1/3 less fat cream cheese and just spread a thin layer across the entire piece of chicken then topped with shredded Colby jack cheese and crumbled bacon. I would HIGHLY RECOMMEND THE BACON, it added a lot of flavor and took away from the richness of all the cheese (also great for low carb diet)! Cooked about 40 minutes and served with rice and salad.

Cheddar Spirals

Always a big hit at family gatherings and potlucks. Substituting Velveeta for half of the cheddar will make it less "greasy". The small package of Velveeta and 2 cups of cheddar is just right.

Delicious, but makes A LOT! I halved the recipe and used an 8x8 baking dish and still had plenty to serve 4-5 people. I layered as others suggested: pasta, sauce, cheese, sour cream. And make sure to cover while baking to avoid drying out.

Awesome Slow Cooker Pot Roast

Soooo good! I use a combination roast for this recipe and start by coating with seasoned salt, pepper, garlic, and flour then browning before placing in crock pot. A 2.5-3 lb. roast cooked on low for 7 hours easily shreds with a fork and is perfectly cooked.

The perfect mix of salty and sweet, so good! And easy to alter for any holiday or occasion by melting a cup of white chocolate chips, a little crisco, and any color food coloring and drizzling over top!

Hot Fudge Ice Cream Bar Dessert

Quick and easy recipe. Everyone seemed to enjoy, but very rich so make sure to cut small pieces! I served 6 adults and didn't even use half of the 9x13, will definitely cut the recipe in half next time. I used hot fudge with the pb instead of chocolate sauce and drizzled that and some caramel directly on top of the ice cream sandwiches, then added cool whip layer. Topped with crushed oreos instead of peanuts. Looked great and tasted even better!

Chicken Enchiladas II

I made this recipe as is, but left out the green onion and used shredded rotisserie chicken. My only complaint was I only ended up with 4 enchiladas. Next time I will use smaller tortillas or double the filling. Delicious!

Brown Sugar Meatloaf

I made a few alterations, added garlic, green pepper and celery to the meat mixture and cut the milk to about 1/2 cup. Also added about 1 tbsp. of worcestershire to the sauce mixture which I poured over the top. With these alterations it turned out perfectly!
