Sweet Potato Enchiladas
Delicious! I tossed in a can of chicken breast so it appealed to my husband a bit more. I used green enchilada sauce and flour tortillas. Can't wait for leftovers

Deep Dish Potato and Pumpkin Pie
Delicious! I didn't use a pie crust either but I think it would be good that way, too. I have some delicious salsa that's mostly sweet peppers and I added maybe half a cup of that for a little extra zing. Next time I might add some fennel instead. Very good on these cool fall nights!

Beefy Chinese Dumplings
These were all right. I thought they were way too much work for the quality of product. I didn't like the way they came out of the water - unless one was going to use them in soup perhaps. I fried them and they were fine but...
