Chicken Salad

Used leftover chicken that I shredded. Skipped celery and added capers. Added a dash of sugar. Delicious! Simple, yet tasty. And oh so very easy.

Delicious Raspberry Oatmeal Cookie Bars

Used blueberry jam instead, and didn't bother with the tin foil. This was a crowd pleaser. I also once doubled it and baked it in a 9x13 pan and turned out great.

Potato Curry

I doubled the spices except for turmeric and cayenne as suggested by earlier reviews. The curry turned out delicious! It took about 20min for the potatoes to be fully cooked. I think next time I will add some grated onion and some minced garlic as others have suggested, although the curry was still great without those ingredients.

Playgroup Granola Bars

Great recipe! Don't have to buy granola bars at the store anymore. I used less honey (about 1/3c) and less sugar (about 1/3 cup). Used half white and half whole wheat flour.

Whole Wheat Ginger Snaps

Awesome! Only had 1/2 cup molasses so I used maple syrup to supplement. Also, skipped the allspice because I didn't have any. Use 1/2 cup white sugar and 1/2 cup brown. Very tasty, especially with a cup of coffee.

Imitation Meatloaf

I followed the recipe except I used soy mozzarella cheese. Next time I would put less wheat germ and add some ground flax seed. Also, it needs more spices. And I'd use pasta sauce instead of crushed tomato, and use more than 1/3 cup.

Homemade Plain Yogurt

I use whole milk and skip the milk powder. I increase the yogurt starter to 1/2cup. I sterilize everything that touches the yogurt before I start. For incubation, I pour the yogurt into a glass casserole dish, wrap it with a towel, and leave in the oven with the pilot light on between 7-8 hours. Very easy to make, and the yogurt turns out well every time.

Jalapeno Corn Bread

Very good! Reduced jalapeño to 2 and used melted butter instead of oil. Didn't have enough cornmeal so I used 1 cup and increased the white flour to 1 cup. Reduced sugar to 4 Tbsp.

Whole Wheat Honey Bread

Wow, great recipe! First time I used the bread machine. I substituted butter for the shortening, brown sugar for the honey. Skipped the skim milk powder. I would reduce the sugar and salt next time. Set the machine on whole wheat and light crust. Turned out perfect!

Favorite Corn Bread

Great! I doubled the recipe but only used 1 egg (because that's all I had) and added an extra teaspoon of baking powder to compensate. Used canola oil instead of shortening. And used brown sugar instead of white.
