Me and the love of my life
Chicken Enchilada Casserole 1
About this Cook
I love to cook. Mainly becuase I love to eat! I love my cooking more than any restaurant food out there, minus some cuisines that I am to afraid to attempt at cooking. ex. indian, thai
My favorite things to cook
Chicken Picatta w/out mushrooms. I can eat that every day!!
My cooking triumphs
Chicken Picatta, Chicken Marsala, Gringa Enchiladas
My cooking tragedies
Split Plea soup. I tried making it when I was 8 years old, and burnt the bottom of it terribly. I then stirred the soup scraping the bottem of the burnt bot, which gave the soup that oh so yummy flavor a burnt split pea. I am 27 years old, and my family still does not let me forget that day!! ha ha!

Slow-Cooked Chili
This was a great dish, but the reason I cook and not bake, is because I can NEVER just stick to a recipe. SOOOO... I substitued 1lb of beef for 1 lb of JimmyDean Hot Sausage. I added diced green bellpepper, can of corn, the diced tomotoes had the diced chili's already with it, and then added another can of diced medium heat chilis. I also added cumin. It was a hit with a bite!!!

Laura's Quick Slow Cooker Turkey Chili
I took the suggestions an added the diced tomatoes w/ chili's.MMMmmmm!!! There is only 2 of us at home, so I froze the left overs, and it's great to take to work for lunch or eat for dinner when I just don't feel like cooking!! I'm taking it to a family BBQ today, and I KNOW it'll be a hit!

Easy Chicken and Dumplings
Okay, i can never follow a recipe to a "T" unless I'm baking, but even so, this chicken and dumplings was great!!! I did add 1 1/2 diced potatoes, 1/2 cup of frozen corn, and 1 cup of non fat milk to the broth w/ some flour to make it a tad bit thicker, oh, and I increased the broth to 32 ounces of chicken broth. What can i say, I love it soupy, and it actually turned out perfect!!!
