Spinach Chick Pea Curry
I just made this, and it is SO delicious! I really like spicy food, so next time i might try to make it a little more spicy, but nonetheless, it was awesome! I sauteed the tofu in a seperate pan for about 10 minutes. I also added a little cumin as well. This will DEFINITELY be in my repetoire!

Mexican Casserole
the only thing i would recommend is serving this with a side of sour cream!

Broccoli Tofu Pitas
This sandwich would probably be ALOT better if you chilled the broccoli and tofu first...but i put it right into the pita, and it ripped a hole in the bottom and the dressing got really watery and didnt have much flavor. I was pretty disappointed
