Cucumber Soup I

Reviewed: Jul. 21, 2009
The adults all enjoyed this soup; the teenagers didn't like it much. I served it cold and used reduced fat sour cream. In the future, I will make this soup the day before I plan to serve it, because it is even better the next day, with richer flavor. I used about a 1/2 teaspoon of salt to season the soup and that was the right amount for us.

Beef, Green Chili and Tomato Stew

Reviewed: Jan. 26, 2009
I have made this recipe for my family quite a few times and we always enjoy it. I usually make it with pork, rather than beef and adjust the spiciness to suit our preferences. I have also halved the recipe, which also worked well. It is excellent served with rice. We also like to top it with sour cream.

Mama Bear's Porridge

Reviewed: Jan. 16, 2009
My husband and I basically enjoyed this recipe but were put off somewhat by the flavor of powdered milk. There is really no reason why powdered milk has to be used, so if I make it again I will either use regular (skim) milk or simply use water. It would probably also be easier to beat the eggs into the liquid before heating. Otherwise, if you aren't careful, you could end up with streaks of cooked egg throughtout your cereal.

Elegant Orzo with Wilted Spinach and Pine Nuts

Reviewed: Jun. 6, 2008
I have made this twice. The first time was according to the recipe with the exception of cutting back on the oil and butter. Its quite good but makes a huge quantity. The second time, I made it with 8 oz of mini bow-tie pasta since I was out of orzo 4 oz of feta and reduced the butter and oil to about a tablespoon each. I used toasted pecans in place of the pine nuts. Since my family doesnt like spicy food, I also cut the red pepper to 1/8t. Everything else, I left at the original quantity. This version was quite good as well, even though orzo is nicer in this recipe than the bow-ties. I will probably make it again using parmesean or asiago cheese instead of feta to see how that works. Don't be afraid to try this recipe and tweak it to suit your family's taste preferences.

Watermelon Gazpacho

Reviewed: May 23, 2007
All the adults who tried this gazpacho enjoyed it very much. The children didn't care for it, but I didn't really expect them to. This is an excellent, refreshing soup. I imagine if it were all pureed, it would also make a nice drink (a la V-8)
