Asian Lettuce Wraps

Delicious! Used turkey instead of beef to make healthier. Didn't have rice wine vinegar; used cider vinegar. Also added 1/2 c of diced red pepper. Will definitely make again!

Grandma Johnson's Scones

I should have looked more carefully at the other reviews...I did what the instructions said, and divided the dough into 12 wedges. They got massive and I had to keep on adding time onto the recipe. After I finally cut them all in half, they still took 35min to cook through.

Chocolate Zucchini Bread I

Used 1.5c sugar, added 3 tsp cocoa powder. Half white, half whole wheat flour. Only 2/3 c chocolate chips because that is all I had. Made 18 big cupcakes, 25min in the oven. Could be a bit more chocolatey - doesn't look or taste as dark and rich as I'd like, but tasty and moist.

Old Fashioned Pineapple Upside-Down Cake

Used a 12inch skillet, since that's all I had. Added 1/2c pineapple juice and 1/3c shredded coconut. Wow, it was not what we were hoping for. Took an hour to set up, tasted raw in the middle and hard like a hockey puck on the outside. Also, the pineapple floated up to the top. Probably my biggest baking disaster

Grandmother's Buttermilk Cornbread

Amazing! Perfect amount of sweetness for me, though I like things sweeter than most, so might cut down the sugar to 1/2c next time for the others who will be eating it. I didn't have buttermilk, so I used another reviewer's suggestion of replacing 2 tbsp of milk with lemon juice. Baked in pre-heated 12inch cast iron skillet for 25min. Will definitely make again.

Teriyaki Pork Tenderloin

First time making pork tenderloin. Found it came out very tender and moist, yum. Didn't think the marinade made it that flavourful, but used it to make the gravy which when added on top really made it lovely.

Scallops Mascarpone

I was pleasantly surprised by how good this was. I used 4oz of mascarpone, because that was all I had. No salt or onion powder. Put in shrimp, turkey bacon and asparagus. I liked the flavour that the turkey bacon added. I would make this again.

Cilantro-Lime Dressing

This dressing is fabulous!! I used approx. 2 tbsp less oil, and 2tbsp more lime juice, as I love the lime taste. Used on spinach salad with goat cheese, tomatoes and walnuts. Yum yum!

White Chocolate, Chocolate Cookies

Yum yum yum....I substituted one tsp of baking soda with corn starch, and added some vanilla. Used white chocolate chunks instead of chips. Smooshed the balls down a bit before putting in the oven...these cookies taste delish! A bit crunchy on the outside, soft on the inside.

Cola Pot Roast II

I used a 5lb roast, browning the meat first, then throwing everything in the slow cooker on low for 10hrs. The meat was just falling apart when we ate it- it was good, but could have been better-I would probably cook the veg separately as the carrots and celery did seem a lot saltier than the actual meat, making the meat seem a tad bland. Might put a rub on the meat next time. Used a full can of coke. Will definitely try this again.

Spanakopita (Greek Spinach Pie)

I enjoyed this recipe- I used two packages of frozen spinach, well thawed and squeezed instead of the fresh stuff. I also used 8 sheets of phyllo on the bottom, and 3 on top, because there was so much overlap from the bottom. I may try it in a bigger pan next time. I would perhaps use a bit more feta and add some ground pepper as well. Like another reviewer, I made it and froze it, baking and eating it another day. Baking it for 1hr was perfect.

Caramel Bars

These bars are to die for! I doubled the oatmeal mixture, and used 1c of butter. I only had pecans on hand, so I used these instead of the walnuts. Baked in a 9x9 pan. The bottom took 13min and the top took 18min. Using a pizza cutter to slice the bars was a great suggestion!! Will definitely make these again. I might possibly use more caramel squares (perhaps 45?), but they came out great as is.

Brown Sugar Meatloaf

Loved that hint of sweetness to it. Next time I'll saute the onions beforehand- didn't like the crunchy onions. May also substitute half the onion for some bell pepper, and add some worchester sauce.
