Ricotta Stuffed Zucchini
This was great! I used cottage cheese instead of ricotta and it worked well. Also, added garlic like some other reviewers mentioned and a dash of hot sauce. Lovely!

Beth's Portobello Mushroom Burgers
This was really delicious. I marinated my mushrooms with sliced onions in olive oil and balsamic vinegar before putting them in the oven. I also mixed some horseradish with mayo and the flavors were great! Thanks!

Bucatini Pasta with Shrimp and Anchovies
This was a delicious dish. I didn't have anchovies, so I in place of that salty item, I used chopped green olives. They played nicely with the flavors! I also used a can of diced tomatoes in place of the fresh and it worked out really well. Thanks!
