Garlic and Tomato Tilapia
I followed the advice of others and used the RoTel tomatoes and added fresh basil and simmered the sauce before putting on the tilapia. I did season the tilapia with salt, pepper, all purpose dill mix(Pampered Chef spice) and lemon pepper. This was very good and an easy QUICK meal. I used the sauce on 5 fillets and have leftovers to take to work. Will defiantely use again!

Chicken with Lemon-Caper Sauce
YUMM__O! This recipe is also known as Chicken Picatta. I worked for Olive Garden for 9 years and this was one of my favorites. This recipe is amazingly awesome!!!!!!!Just like Olive Gardens. My only suggestion is to double or TRIPLE the sauce because I love to dip my bread in it as well as make sure my meat is coated well. I don't like to skimp. This is also great substituting veal and I may try the sauce on pork chops. You can NOT go wrong with this recipe. EASY EASY and friends will think you fussed a long time over it. This will become a staple in my house. Everyone has GOT to try this one. ENJOY!!

A Plus Fair Corn Dogs
I followed the suggestions of others-dried the dogs, floured, and put the batter in a tall glass. I fried these at 400 about 3 at a time so that the temp would not drop too much. These were GREAT! I am not a Corn Dog fan so to speak, but I enjoyed the "crunch" that you don't get from the frozen ones. These are cheap to make also. Why spend the $$$ on buying these. My daughter helped me make these and she also enjoyed them. I tried this recipe because I am thinking about making corn dogs for a community celebration and there is ususlly hamburgers or BBQ. Thanks Roby for a great recipe and thanks to all you others for the reviews to help me "tweak" this. EASY to make and GREAT to eat!! The only thing I "miss" is the crunchy batter that is at the end of the stick. I will survive. :-)
