Pecan Pie V

Finally!! I was able to create an edible pecan pie. I have tried and tried over the years and for some reason, I have failed consistently. It would drive me crazy because I can make all kinds of pies with success but never pecan and my grandmother always claimed that it is the easiest to make. This year I followed the advise of one of the reviewers and cooked it until it began to crack on top, the results was a pecan pie that was set in the middle and tasted terrific.

Banana Cream Pie I

Absolutely fabulous! This pie was to die for!! I followed the recipe exactly and used the Nilla Wafer crust that was recommended, the result was the best banana cream pie I've had since my grandmother passed away. I made sweetened whipped cream (recipe from this site) to top it off and it was perfect.

Cranberry Sauce

This cranberry sauce is fabulous. I have never attempted making my own and I will never go back to store bought after trying this. It was so easy to make. I added 1/4 tsp cinnamon and the zest of 1 orange, I cooked it for 25 - 30 minutes to make it thicker.

Blueberry Pie

This pie was delicious. I used 5 Tbs of cornstarch and 1 cup of sugar as some of the reviews recommended. I think I could get away with 6 Tbs of cornstarch next time, the filling was still just a bit too runny. The only issues I had were that the filling bubbled over and formed a large puddle in the bottom of my oven so I'll be sure to place a cookie sheet beneath it next time and the crust became glued to the pie pan because the juice that leaked out seeped under the crust. However, it was still tasty and I will make it again.

French Pastry Pie Crust

This crust is delicious. I followed the recipe exactly and it was a great success. This is the first crust that I have made, I usually take the safe road and use Pillsbury. I'm glad I took the chance, my family preferred this crust. I am no longer afraid to make my own crust and I will use this recipe from now on.

Apple Crisp II

I made lots of changes but it was great! I used Macintosh apples. In the apple mixture I reduced the water to 1/4 cup and the sugar to 1/2 cup, I used 1 tablespoon of cornstarch instead of flour. I also added 1/4 teaspoon of nutmeg, 1/2 teaspoon of salt, 2 teaspoons of vanilla and 1 tablespoon of lemon juice. For the topping, I doubled it and added 1 1/2 cups chopped pecans. I ground the oatmeal in a food processor (because my husband doesn't like the texture), added 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg and 1/2 teaspoon of salt. I baked it for 55 minutes and then put it under the broiler for a few minutes to additionally crisp the top. It's wonderful!! Thanks for a terrific recipe.

New Duchess Spice Cake with Maple Buttercream Frosting

Rich Chocolate Frosting

This frosting is superb! I have made it several times now. It has replaced my original chocolate frosting recipe. It's so good that when my father tried it, he declared it his new favorite frosting (his prior favorite was the buttercream recipe on the Domino confectioners sugar box).

Banana Crumb Muffins

These muffins are awesome! I have a habit of reading all or many of the reviews for a recipe before making it and changing the recipe according to the reviews. This time, however, it was Sunday morning, I had 3 overly ripened bananas and a craving for some muffins. I made this recipe exactly as written and it is wonderful! I will make these again and again...thank you for this terrific recipe!

Peanut Butter Bars I

These were just okay to me. I used a 7" x 11" pan and cut them into 40 bite-sized pieces. They have to be kept refrigerated or they become too soft and I'm not a fan of cold chocolate. Preparation was super easy using Keebler graham cracker crumbs. I probably won't make them again though, they just didn't "wow" me.

Slow Cooker Beef Stew I

Very good stew. I used 1/3 cup flour, 3/4 teaspoon salt, 3/4 teaspoon pepper, 5 potatoes, 2 stalks of celery, 2 cups of beef broth. I also made a 33% less sodium brown gravy packet and added that. Other than that, I followed the recipe. I would add more salt and pepper next time.

Spinach Phyllo Cups

These are so good. I made them for a party and they were very well received. I added 3/4 teaspoon of salt and some chicken to the original ingredients. I stuffed the shells and sprinkled them with some diced tomatoes and an Italian 3 cheese blend before baking. Excellent!!

Chocolate Covered Strawberries

I used 1/2 milk chocolate, 1/2 semi-sweet. Made the recipe even easier by microwaving the chocolate and shortening. 1 minute on high, stir 30 seconds more on high...perfect and delicious!!

Golden Sweet Cornbread

I have made this cornbread several times now and just noticed that I had not reviewed it previously. This is a delicious, sweet, light cornbread. I like it sweet so I use a rounded 2/3 cup of sugar, a smidge more salt and 1/2 a teaspoon of vanilla. I don't use vegetable oil at all, always canola and I use an extra tablespoon for added moisture. I bake it in a dark non-stick 9" x 9" square pan so I lower the temperature to 375 and add 3 - 5 minutes. The result is terrific.

Banana Cake V

This is a wonderful moist cake. I followed the directions exactly and we loved it. Lighter than a banana bread and yet more dense than a traditional cake. I will continue to make it exactly as the recipe indicates, it was just the right sweetness for us.

Caramel Frosting V

This frosting was a disaster for me. I followed the directions exactly and because of all of the reviews warning to be sure to cool completely before mixing, I refrigerated overnight before touching it. As it warmed, it became too wet, I added 3 1/2 cups of confectioners sugar (1/2 cup at a time mixing well after each addition) to try to solidify it...never happened. This frosting must remain cold at all times or it will not hold up. Unfortunately, I was bringing it to work (a half hour drive) and in that time it warmed enough to cause the top layer of a 2 layer cake to slide off of the bottom layer.
