About this Cook
My favorite things to cook
I absolutely love to bake and make yummy desserts!! I'm constantly making something and giving it to friends or family. I love to hear their reactions and critiques. It makes me happy when they like what I've made.
My favorite family cooking traditions
Every Christmas my Mother, Aunt, Sister and a few close friends get together for two days of cookie baking. We usually make between 15 and 20 different kinds. We keep some for our families and give some away as gifts. I also love going strawberry picking in the summer and making jam. My girls love helping!!!(Eating the berries fresh from the field ;)
My cooking triumphs
Cooking my first cheesecake. I was very nervous, but now chocolate chip cheesecake is one of my specialties.
My cooking tragedies
I often get wrapped up in making too many things at once and I am famous for forgetting about the rolls or biscuits! My oldest daughter claps when I remember them and don't burn them!!

Juicy Roasted Chicken
I really can't say enough about how easy, tasty and JUICY this chicken is!! Due to lacking ingredients in my pantry I did make some minor changes. I substituted garlic powder for the onion powder and also placed some chopped onion in the cavity w/ the celery. I also used unsalted butter rather than margarine, some of which I also placed up under the skin. To my whole families delight this was the best and juiciest chicken we have ever eaten!! To be certain it is much better than any store bought broasted chicken!!! Only thing I would change is using all the wonderful drippings to make gravy and serve w/ mashed potatoes next time!! Thanks for such a wonderful recipe!!!

Best-Ever Texas Caviar
Really liked this recipe. I read the reviews and took some suggestions. I used navy beans instead of pinto beans, and half the cilantro suggested per my personal taste. Only complaint was too much oil. I will cut back on that next time I make it. There will be a next time.

Monster Cookies
This recipe makes a huge batch!! I made them to sell at a food booth for a swim meet and I still have dough left. I followed the recipe with the exception of the coconut and added m&m's to appeal to kids. I made larger than normal scoops on the cookie sheet and the came out very nice. The edges do brown up quickly as a typical butter cookie does. Next time I will try making with crisco as I prefer a little chewier cookie. Prepare for a work out with this recipe. I had to even give my Kitchen Aid a break!
