About this Cook
I am a happy homemaker with two children (one boy, one girl) and a partner who makes me so happy I can fly. He has two grown children who I adore. I love to cook and bake - it is my time to breathe. It's one of the very few things in a person's every day life that you can see a beginning and a direct result in the end. Satisfaction every day! In January 2008 I joined Weight Watchers and am on a mission to find ways to make my favorite full fat recipes more lean and over-all healthy.
My favorite things to cook
I love the ease of casseroles, one pot meals and crock pot cooking as well as stews/soups and grilling. Lately I've taken an interest in cheesecakes after baking a pumpkin cheesecake for Thanksgiving. I'm anxious to try many varities.
My favorite family cooking traditions
We have homemade pizza night when I put tons of toppings on the table and every one gets to dress their own pizza (flattened refrigerated biscuits).
My cooking triumphs
I feel most successful when I get a WOW from my boyfriend and/or kids. I still remember how it felt when my boyfriends 18 year old son told me my spaghetti sauce was better than his grandma's. We all know grandma's are the best cooks!
My cooking tragedies
I attempted my first homemade pumpkin pie this year for Thanksgiving. We were traveling to Nebraska from Minnesota so I was in charge of the desserts. I wanted the pie to look perfect so I avoided checking the filling and boy was that a mistake! Outer done - inner NOT done. Better luck next year!

Army SOS Creamed Ground Beef
We LOVED this! After reading several reviews saying that the dish was low in taste I opted to use three bullion cubes instead of one and the taste was perfect. We served it over bow-tie noodles but I am thinking it'll be just as great, if not better, served over biscuits or toast. Yummy!

Buttermilk Cinnamon Bread
This is a good, not great tasting bread. I did as other reviewers had posted and added a 1/2 tsp of vanilla to the oil/sugar/buttermilk/egg mixture (I halved the recipe for only 1 loaf). I had also followed another reviewers suggestion and didn't use all of the cinnamon & sugar mixture and after tasting the bread I wish I had used as much as the recipe had called for. I will make it again but in the meantime I'll be searching for add-ins to give it a little more taste and moisture.

Crab Brunch Casserole
I was looking for a crab dish to serve with a steak dinner and this was perfect! I followed the recipe as listed and it turned out absolutely wonderful. It was such a great compliment to the ribeyes I grilled. To add to the greatness of this dish, the leftovers reheated beautifully for a quick breakfast the next morning. Highly recommended.
